I love calorie dense foods for lunch. I'm a nurse, so I have to eat quickly sometimes, and not feel bogged down or bloated from a ton of veggies. I like natural pb with wild honey or fresh berries on whole wheat bread or a mulitgrain wrap. Or a baked potato topped with cheddar, sourcream, chives and some chopped brocolli. I sometimes have a homemade smoothie for lunch with almond butter, cottage cheese, ff yogurt, chocolate protien powder and a bit of oats all blended up with ice. Mmm!

I love making a burrito salad. Tons of beans and salsa. Yum.

For lunches, we usually have leftovers but there are all sorts of things to bring: --- buy some of those steamer bags that have frozen veggies in them, steam one and add to brown rice and chicken with some soy sauce or teriyaki sauce --- as others have said, sandwiches and fruit --- egg whites drizzled with balsamic vinegar + a salad --- on the weekend, you could make a nice homemade veggie soup to save on the sodium and cals --- Healthy Choice has these pasta dishes that are in the packaged dinner section (not the frozen), I've never tried one but it looks easy and quick. |
