Eric's Amazing Sauerkraut Soup 5 1/3 medium potatoes, cut in 1/2" cubes 32 ounces sauerkraut, undrained 8 ounces Newcastle Brown Ale Beer (dark beer) 8 ounces turkey smoked sausage, sliced 1/2" thick 1 7/8 cups parmesan cheese, grated 4 cloves garlic, chopped 1 1/3 medium onions, chopped salt and pepper, to taste 2 teaspoons oil water Using a large pot, heat up oil. Once oil is hot, add the garlic and the onions. You may have to use some cooking spray or add some water so that it doesn't stick. Cook the garlic and onions for 2-3 minutes then add the potatoes and kielbasa. Add salt and pepper for seasoning. Cook the potatoes and kielbasa until lightly browned. Reduce heat slightly, then add about 1 1/2 cups of water, the beer, sauerkraut along with the water inside the bags. The liquid should cover all of the ingredients slightly. Once all the liquid is added, add the parmesan cheese. Cook mixture for about 45 minutes on medium heat. Add salt and pepper for additional seasoning. Soup is finished once potatoes are cooked through. We put ours in the slow cooker and it comes out great. Warning: it does give you gas! Great source of fiber. ;) |
