I agree that the last thing I want to do when I walk in the door from work is make dinner. So.....I do my best to avoid it as completely as possible!! I have managed to develop a good routine with my family that pretty much eliminates the weekday dinner panic. I typically spend a few hours on Sunday afternoons (when all of my favorite public radio shows are broadcasted) preparing meals for the week. My husband and daughter plan something fun for that time. A few meals go in the fridge and the rest are in the freezer. Then, during the week, I just have to take something out to defrost - done in the morning before work when I am feeling super virtuous! Admittedly, there are times when, even with the meal defrosted, I am tempted to grab a pizza on the way home, but I usually can fight the urge. Hope this helps!

p.s. My husband has a similar view towards "healthy" meals. As there are only three of us eating (one of whom is age 5), there is usually enough for him to have a larger portion or seconds. I also rely on quick side dishes that I don't eat - freezer biscuits, quick sauced pasta packets, etc. - to liven things up for others!

In addition to cooking big batches of stuff on the weekends (everything I make feeds us for at least two nights and I have some recipes that feed us for three or four nights), have some quick go-to meals that don't require a lot of work. Some of mine are:
  • Chicken sausage on hot dog buns. This would work well for you because your DH could have whatever kind of sausage/bun that he likes, while you could have the lower calorie chicken sausage in a hot dog bun.
  • Salmon patties. I get them from Trader Joe's and we make sandwiches out of them. My SO uses his high calorie bread and I use my low calorie, multi-grain bread.
  • Pasta in a marina sauce with frozen turkey meatballs (your husband could just have a bigger portion and more meatballs)
  • Fresh fish is super easy! just stick it in the broiler with a little lemon, salt and pepper. You can experiment with other spices such as oregano, cumin, basil, thyme or serve it with salsa and/or guacamole. Have baked potatoes on the side (also super easy).
  • Easy Chicken Adobo. If you bought chicken tenders, you could basically just throw them into the pan with the other ingredients. You could also buy precut veggies to throw in as well.
  • Tacos made with lean ground beef, turkey, or pork, or chicken tenders (not ground) and corn tortillas. I use the fajita seasoning packets, low fat cheese, salsa, and sometimes guacamole. Your DH could put whatever he wanted on his and have as many as he wanted.
  • Turkey kielbasa with onions and peppers. I just saute it (no oil is needed, the kielbasa has enough fat in it). Sometimes I add a little fennel seed and oregano. We have a veggie or a salad on the side.
