broccoli. no one really cooks it right anymore it's usually either over done or underdone and i'd rather eat it raw or burnt that suffer that steamed pile of destruction
I can't stomach bean sprouts either. My favorite pad thai dish comes loaded with them and if I forget to say "no bean sprouts please", I spend 15 mins picking around them for one bite.
And while I know it's an herb, I HATE cilantro. It tastes like soap.

cooked carrots gross me out. Eggplant has to be cooked a certain way for me to eat it, and it has to be mixed with something so I can't taste it very much.
as for brussels sprouts....as long as they aren't overcooked, they are divine....mmm, roasted with a little olive oil..oh my. I have some in the fridge right now.
The list goes on I'm sure if I really thought about it. On the other hand I LOVE plently of veggies like peas, green beans.. all sorts of beans actually (yummy), carrots, spinach, corn, sweet potatoes ().. etc

I can't stand cooked carrots (too mushy!) or mushrooms (squicky texture! blech!) and even though I love tomato sauce and paste, I cannot stand chunks of tomato. The texture is just too weird and squishy, and raw tomatoes are too acidic for me to stomach. It's always a gamble ordering pasta in a restaurant, because I never know whether the tomato chunks will be small enough...
Chard. I've been able to use it sauteed in quiche, but that's the only way I've been able to make use of it.
Kale, Collard greens-same problem. I've never been able to prepare them in a way to make them taste right to me.
