ANNIE'S BOCA MCMUFFIN BREAKFAST

1 Boca Burger

1 Wonder Light Hamburger Bun...Toasted

1/4 cup Egg Beaters® 99% egg substitute (I use the non fat)

1 teaspoon Kraft Light Done Right Thousand Island Dressing


Spray a non stick skillet with Pam.

Cook Boca Burger on low heat, five minutes per side.

Remove Boca Burger and add Egg Beater to pan until done.

While egg beater is cooking, toast Wonder Bun

Add Dressing to bun with other ingredients and serve hot.

Banana-Soy Smoothie

Veggie "McMuffin"
 
Whole wheat english muffin (I use Pepridge Farm) - 2 points
1 slice of 2% cheese slice - 1 point
Two morning star farm sausage pattys - 3 points

heat pattys til cooked, toast muffin.. Place one patty on bottom half of muffin, place half of cheese slice on "sausage" (fold in ends). add other patty, top w/ rest of cheese (fold in ends), and top of muffin and eat!

Yummy and filling 6 point breakfast! (even food for those who arent strictly a vegetarian)

Another Version...
 
Mm. I love those. I make a similar one.

-One english muffin
-Small amount of egg beaters (thin layer in a small pan)
-Yves Canadian Bacon slice (pure protein, no fat)
- 2% Kraft cheese slice

Toast the english muffin. Cook egg in thin layer, fold into 4 so egg will fit on muffin. Microwave the canadian bacon slice for about 30 seconds & top with favorite cheese slice. Put it all together and voila! Delicious. McDonalds only wishes theirs was so good. :) If I recall, I think mine comes out to about 4-5 points. The small amount of egg beaters and Yves Canadian bacon are VERY low in points, maybe 0-1 each.

Peach Muesli
 
Ingredients:

2 cups uncooked rolled oats (quick cooking or regular)
2 cups coarsely chopped fresh peaches, partially peeled
1 1/2 cups apple juice
8 ounces vanilla or peach nonfat yogurt
3/4 tsp. nutmeg

Mix all of the ingredients together in a large bowl. Cover with a lid or plastic wrap and refrigerate 8
hours or overnight.

Serve muesli cold and uncooked and topped with fresh berries of your choice. The muesli may be
stored covered in the fridge for up to three days.

NB* I use unsweetened apple juice and non-fat sugar-free yogurt to cut down on some calories and
sugar content :)

Greek Fritta - 2 points per serving!
 
Ingredients:

1 1/2 cups Liquid Egg Substitute
1/4 cup(s) fat-free milk
1 tsp dried dill weed
1/4 tsp table salt
1/4 tsp black pepper
1 medium onion(s), finely chopped
2 clove garlic clove(s), minced
5 oz chopped frozen spinach (half of a 10-ounce package)
1/4 tsp lemon pepper
1 small container of Lowfat Feta

Directions:

Combine eggs, milk, dillweed,salt, and pepper in a medium bowl; set aside. Heat margarine or butter in a 10-inch broilerproof skillet until melted. Add onion and garlic; cook 1 to 2 minutes until tender. Stir in spinach and lemon-pepper seasoning.

Pour egg mixture into skillet over spinach mixture. Cook over medium heat. *** mixture sets,run a spatula around the edge of the skillet, lifting egg mixture to allow uncooked portions to flow underneath. Continue until almost set (surface will be moist).

Sprinkle with feta cheese. Place skillet under the broiler 4 to 5 inches from the heat. Broil for 1 to 2 minutes or until top is just set. Cut into eight wedges.

Serves 4
