I've always had trouble with my weight doing vegan. Now I track everything that I put in my mouth. I eat it it gets written down. It's the only way I can keep my calories in check

Yeah! Just search on YouTube.com for "How to Cook Tofu Like a BOSS (BEGINNER'S GUIDE TO TOFU)" to find one of the best guides on the internet. The video is by Cheap Lazy Vegan. She has a bunch of amazing plant-based recipes that you can try. :D

Yes, it most likely will. Processed food (regardless of whether or not it's vegan) tends to contain undesirable amounts of sodium and refined sugar. It also tends to be packed with calories. Replacing such products with unprocessed (or at least minimally processed) fats, proteins and carbs is -- in my opinion -- one of the best things that you can do for your body.

Recommended fat sources: Avocados, seeds, nuts, and limited amounts of raw cooking oils.
Recommended protein sources: Beans, lentils, tofu, seitan, tempeh, and quinoa.
Recommended carbohydrate sources: Brown rice, potatoes, amaranth, millet, yams and whole-wheat pasta

I became a vegetarian when i was like 13 and i was fat all the time, but you have to remember that veganism/vegetarianism are not diets to lose weight.
