How to try low carb, high protein veg diet?
I have been veg for years. Over the past 6-7 years, I have found a great increase in the availabilty of veg friendly proteins - veggie burgers, etc... - but I have never been able to get away from the carbs!!
I really want to try to lower my carbs and up my protein, but cannot eat a whole plate of tofu! What kind of low carb, high proteins do you all eat?? And same for snacks? I normally eat fruits, cause they are easy to take on the go. What kind of veg protein is portable? |
There are several veg south beachers and a couple post their menus in the on plan thread. That's a place to start anyway.

DH (not veg) wants to try Atkins...I have no real interest in Atkins, but would like to get away from some of the carbs and be able to find a meal that we both would like. |
I've been doing the low carb thing for about three months now and about 3 weeks ago I started eating vegetarian as well. As carb replacements I eat a lot of riced or mashed cauliflower, shirataki noodles(tofu noodles), and kelp noodles. These items are so great and I seriously don't even miss rice and pasta because of them.
I love beans and eat them at least once a day. They go great in salads for some added protein or mixed with some cooked veggies. For the first week of the veggie diet I did eat a lot of the fake meat soy products and they are really tasty. However, they have a lot of salt in them and I ended up gaining 2lbs of water weight that week. Since then I have cut back and will only eat the veggie burgers, veggie sausages, etc. around twice a week. |
