Grilled portabella caps? I like to marinate them in italian dressing and then stuff them with feta.
Skewers with grilled seiten and red peppers, onions, mushrooms, grape tomato? I am not huge on veggie burgers, but I do like these soy free sausages -> http://www.fieldroast.com/products.htm I like the apple/sage one. oh, you can also make pizza on the grill. Use a whole wheat pita, add some feta (or tofu), tomato sauce, yellow pepper, olives. yuuuuum. Have you tried grilling tofu? It's pretty good. Just marinate it in italian dressing or bbq sauce and slap a slice right on the grill. |
I love veggies on the grill! Some asparagus tossed with olive oil, salt and pepper. Grill it until it's soft. Also pineapple on the grill becomes much sweeter and a nice side dish or dessert. Enjoy.

Grilled vegetables are usually what I eat when we grill. I make kabobs with eggplant, squash, mushrooms, onions, peppers ... whatever is in season. TJ's has a great Masala veggie burger if I really want the "burger experience".
Any stone fruit is spectacular grilled also, for dessert or a fresh chutney or salsa. |
I also like the vegetarian sausages. Here's a link to a comparison between the two major sausage options: http://www.megabeth.net/?p=767
I marinate tofu and grill it all the time: Extra firm tofu, press out the water for about 20 minutes with a plate and a weight on top of the tofu, then marinate for at least 20-30 minutes. I marinate with rice wine vinegar, soy sauce, fresh garlic and ginger, and a pinch of dry wasabi. You can either grill the slabs directly, or make "fingers" of tofu before marinating and grill them on wooden skewers. Soak the skewers ahead of time so they don't burn. I like the fingers the best. I experiment with home-made veggie burgers from various recipes. So far I've not had any spectacular successes but if I do I'll post it! |
