Ok so I was unable to find a recipe that I had all the ingrediants for so I kinda threw what I had on hand in the wok. It was sooooooo good, I am hooked on these noodles.
1 block firm tofu (cubed and browned in PAM)
1 mixed veggie bag (this one had corn, carrots and asparagus)
1 can of bamboo shoots
1 can of water chesnuts
1 package Udon noodle (250 calorie size, soak in hot water about 5 min, drain)
1 small red peper (chopped)
1 large onion (chopped)
4 large mushrooms (sliced)
1 tbs EVOO
Sauce (mix all together)
Store bought stir fry season packet
2 Tbls tamari soy sauce
2 tsp splenda
1/3 cup water
Heat oil in wok-stirfry onion, pepper and mushroom about 2 min-add veggie back, water chesnuts adn bamboo stir fry about 2 min-add Udon noodle and sauce, stirfy about 1 min-add tofu already browned stirfry about 1 min-all done
I was leery at first about my bag of veg being a little odd but it worked well. Mine came out to about 25 calories per oz.
