what to do with a veggie burger besides slapping it on a bun?
I love veggie burgers but placing them between two slices of bread gets stale after awhile. So how else do you all use them? In a diet friendly manner, of course.
I came up with one idea. I used a Morningstar black bean burger, cooked and crumbled it up. Added some brown rice to the mix, a Haas avocado, salsa and a tbsp of reduced fat cheddar. Mixed all the ingredients together in a bowl and chowed down. Delish! |
Sometimes I chop them up and put them on top of a salad. Or slice one and put it in a wrap with veggies and such.

Crumble it over a microwaved yam. Add salsa and chunked up avocado. :drool:

Chop it up & put it on a salad. Chop it up, and mix it into a stir-fry. I actually seldom eat them on bread at all. :)

It's good if you add tomato sauce and spices. Kinda like sloppy joes. Although there your still probably putting it on a bun. I like to also crumble it and add it to black beans with onion and cumin and paprika, oregano, onion powder, pepper salt and cayenne pepper. You could use taco seasoning, but it had additive and other preservative that when you add your own seasonings do not. Anyways then eat it in tacos. I like to add the beans because it has more moisture, plus they are a great whole foods source of fiber and protien. then top with lettuce salsa tomato olives whatever you like!

Throwing one on a grilled portabella mushroom with soy-bacon and a nice slice of cheese is a fav of mine :)

I like to crumble it on top of sauteed bell peppers, onions, tomatoes, all on top of a pile of black beans on top of rice! I get my veggies, a little fat from the patty, and a complex carbohydrates from the mix of rice and beans. It's filling, very low fat when I spray the pan with PAM instead of oil, and it tastes great! I know how things can get stale pretty quickly. I've been a strict vegetarian for five years or more and I have to really mix things up every once in a while to prevent boredom.

What I sometimes do (it's FAST!) is take:
- 2 veggie burgers (micro them for 1-1/2 mins) - set aside - 3 wedges of swiss low-fat Laughing Cow Cheese - 1 can of Water Chestnuts - 1/4 cup of diced onions - 1/4 cup of low-fat Cheddar Cheese - 1 16oz bag of white Shirataki Noodles, rinsed, drained & patted dry (0 cals, 0 fat, 0 sugar, 0 sodium, 100% fiber and 100% organic) - Garlic (optional) - Red/green/yellow bell peppers (optional) ...and mix them all together on the stove til melted and hot. Add ground pepper for taste. It's delicious! I love this recipe because it feels like you are eating a sinfully-fattening dish, but you're not. Made it up one day when I wanted something with a nice chew and crunch. :) |

Make them elegant and stack with grilled eggplant, tomatoes, and other round vegetables, a thin slice of cheese (maybe smoked) then drizzle with a fresh tomato vinaigrette or a balsamic reduction. Sprinkle with fresh herbs or toasted pine nuts. Put on a black dress and marvel at your creation :)

I eat veggie burgers 5 days a week for lunch and I never get bored with it. I take one out of the freezer and transfer it to the fridge before I go to work. When I get home for lunch, I heat it up in a skillet along with broccoli florets. (We don't have a microwave.) I toast an "everything" bagel thin and spread it with Vegenaise sandwich spread, add three slices of jalapeno peppers and I just love them!
PS...the broccoli is eaten on the side - not on the sandwich! LOL |
