Vegan sandwich fillings?
 
Aside from Tofurkey? :D

I need lunch ideas. I'm tired of leftovers, and my eating out options are very limited. I have a good mock egg salad recipe, but that's and Tofurkey are my only staples. Help?

Hummus
Grilled tempeh (tempeh bacon if you like smoky flavors)
Baked tofu
Avocado
Sprouts
Olives
Various veggies (lettuce, tomatoes, cucumbers, pickles)

Those are what I can think of off the top of my head.

The seitan o greatness makes a great sandwich filling, a little like salami I'd venture (not that I really recall what salami tastes like, but seems like it should be similar-ish).

Leftover grilled veggies make a great sandwich. I like leftover veggie "meat" loaf too. Also, don't forget the classic PB & J, or PB & banana, PB & agave is nice too.

I think my problem might be in the bread. Most of the things mentioned, while yummy, just make my wheat bread soggy or tear apart. Maybe pita bread or wraps would be better.

Do you like lettuce? Use lettuce to protect your bread until you eat it from your ingredients. Although I've never had an issue with bread going soggy.

Pack your sandwich stuffing separately and put your sandwich together right before you eat it. Then there's no sogginess.

I'm not vegan, but I like roasted veggies (eggplant, peppers, mushrooms) and lots of sprouts on my sandwiches. If you have the calories, vegan pesto would be good on a sandwich too.

Oh, good ideas! I already use lettuce for my eggless salad, but it's part of the recipe. I'm not sure why I didn't realize what it was there for. :dizzy:

I could easily just bring the sandwich stuff and assemble it at work, too. Maybe I'll do hummus wraps tomorrow. Mmmmm....

I'm horrible at menu planning. Probably why I'm so fluffy. I put off meal planning until I'm desperately shoving spoonfuls of peanut butter and potato chips in my mouth. :o

I made tempeh one time with like a spicy buffalo wing sauce that was vegan. I let it marinate and baked it. It was really good. We just ate it on bread with tomatoes and lettuce, and it was like a buffalo wing sandwich. Yum Yum.

There's these frozen, fake, vegan chick'n and steak pieces, and I fry a few of those up with onions and some bbq sauce and it's pretty tasty.

Peanut butter and jelly. :]

a veggie dog sliced, with saurkraut, vegennaise, mustard, relish. Sometimes a slice of Follow Your Heart mozzarella "cheese". Totally vegan. We serve them in the deli at our store. A Veggie Dog Delite :). People love them.

Another is a tofu "faux" tuna.... with frozen/thawed, blotted, grated tofu. carrot, vegennaise, kelp powder, Braggs liquid amino, onion... with lettuce and tomato it's yummmmy!

Avocado with non dairy "cream Cheese" and/or hummus & sprouts in a pita.

Good luck and just keep trying to plan ahead. It really helps.

I made chickpea cutlets last night for dinner from Veganomicon - and they just happened to turn out sandwich-sized, so I am having one of those in a sandwich today for lunch! Layer with veggies of choice and voila! :)

Today I made own version of a spicy chicken wrap. A faux chicken patty, sliced in thirds and wrapped with lettuce and spicy sauce. Even cold, it was really good. :)

Tomorrow I'm making hummus wraps. :)

there's a company near where I used to live (in Pennsylvania) that made the most fabulous vegan "chicken" salad. I know it was TVP based but I'd kill for the recipe!

right now I'm a big fan of hummus and veggies, although i often get lazy and revert to PB&J.

Soy Curls make an awesome chicken salad. The texture is so much like chicken, it is amazing. I totally forgot about those.
