I'm 1/2 mexican too EZ... my family doesn't make posole though, although I've had it from other mexicans it was bland and uhh not very good :)

Well the Big Sky Posole (the recipe from Tasty Travels) is great! Maybe they should call it something else since it isn't bland. Spicole?

BTW, beans don't make me fart.

New Mexican posole has a kick. I only eat it during the holidays and it is yummy! I should take a page out of Spinymouse's book and eat it in July! ;)

Posole...tamales...I need to put an order in!

But, I eat beans for breakfast often....usually black or pinto beans. I do top it with an egg and plenty of red or green chile (or both! Red and green is known as "Christmas" when you put them together....I never reserve that for the holidays!)

Oh tamales are also a great breakfast! mmmm I was thinking of making some vegetarian tamales, very different from the tamales with lard that my family makes....

Hmmm, when we were in Costa Rica last winter, every place we ate had beans for breakfast (and every other meal!) I should add that to our boring rotation of hot cereal, cold cereal, eggs, repeat! :lol:

While I've never tried beans for breakfast, I don't always stick to traditional breakfast foods. What I eat in the morning is determined more by what's available and what I feel like having. Today my A.M. meal was lentil soup, yesterday it was cashew butter on toasted oatmeal bread and tomorrow it might very well be cheese and crackers.

Depends on what I feel like having.

This thread gives me hope that I'm not crazy :p
This morning my breakfast was leftover "Northern bean, swiss chard, onion/garlic/spices" soup (my homemade) to which I added sauteed onions and portobella mushrooms. It was filling and kept me satisfied for 3-4 hrs. I love reading that there are others "out there" like me :hug:

black beans and rice are awesome for breakfast!!!!! season the beans and rice, and you can add a side of baked plantains, pineapple, papaya...I even throw on some dried banana from time to time...even with out the fruit...TASTY!!! I also make coconut rice with black beans...just use coconut water (also known as coconut juice, NOT CREAM which is almost PURE fat) to make the rice and season the black beans. DELICIOUS!

Black beans stir fried with sweet potato are heavenly in the morning!

Today for breakfast I made a curry spiced mixture of kale and garbanzo beans. It also had fresh turmeric root, garlic, onion, carrot, tomato, a little white wine, coriander, curry paste.
