roasted chickpeas
 
Does anyone know of a recipe for roasted chickpeas (but with no oil). I made them last Summer and they were so good, but I can't find the recipe I used. I'm doing the McDougall diet, and I think they'd be a great snack.

There's one here. I made them a couple times, they're good but I have a hard time getting them all crunchy without getting any burnt.

I had success with these one time.....about the 3rd can of ruined ones, I gave up. I can't keep them from burning either. If you have any tips anyone I would appreciate them.....I really like them, just cant cook them worth a crap.

The recipe on the link calls for 30 - 40 minutes at 400 degrees.

I've only made them once, but the recipe I had was for 350 degrees for 50 minutes. Every 20 minutes I shook the pan so the chickpeas would roll. I had a few start to brown, but nothing burned. Most of them were crunchy, only a few were a little soggy. I had noticed when I spread them out on the pan that a few were wetter than the rest and I'm sure those were the soggy ones.

I make these ALL the time!!! the secret is to use dried chickpeas (cooked of course) before you bake them. I buy the 1 pound bag of dried chickpeas, cook them and divide them up into 2 cup portions bake 2 cups and freeze the rest, taking them out of the freezer each week when I make more. For some reason the canned ones just never get the "right" texture when roasting.
