Snack:
1 oz cashews
apple
Cherry Coke Zero

Yea, I haven't eaten lunch yet, but I was taking a test to get out a math class I do NOT want to take, and passed!!! I amaze myself sometimes...

Ok, to finish up yesterday-

Lunch:
2 cups salad greens
1/4 cup reduced fat feta cheese
2 tbsp reduced fat raspberry pomegranate dressing
1/2 whole wheat bagel with 2 tbsp hummus
nectarine

Dinner:
Gardenburger
1 cup steamed cauliflower and broccoli (Steamfresh bags are a college veggie's best friend!)
1 cup Rice-a-Roni
orange

Snack:
16 reduced fat Wheat Thins
1 wedge Laughing Cow cheese
1 oz light pepperjack cheese
1 Chips Ahoy cookie

Totals- 1780 cal, 59.5 gms/fat, 35.5 gms/fiber

We were up till 10 decorating our hall bathroom, and the only snacks my RA had were potato chips and cookies. The cookies were small enough so I ate one.

Today-

Breakfast:
3 egg omelette with veggies
2 cups grits, no butter
2 tbsp shredded cheddar cheese
biscuit, no butter
apple
banana

Lunch:
1 slice cheese pizza
1 slice veggie pizza
1/4 cup pasta salad
1 cup spinach leaves with dressing
wheat roll
apple

Ok, so I decided to try out the eating halls today. Breakfast wasn't so bad, a little high because of the omelette, but it was reasonable. Lunch was a whole 'nother ball game. The other place here has nice stuff, but only one small section for salad, and 3 containers of that is pasta salad! They also have a fairly big dessert bar. No wonder we're gaining the freshman 15!

Yesterday-

Dinner:
Gardenburger
1 cup Rice-a-Roni
1 cup steamed vegetables
1 cup milk

Total- 2001 calories, 69.5 gms/fat, 23 gms/fiber

Today-

Breakfast:
2 slices whole grain bread
2 tbsp hummus
banana
1 cup milk

Snack:
apple
1 oz light pepperjack cheese
Fiber 1 bar

Lunch:
2 cups egg drop soup with won ton strips
2 cups steamed rice
4 cups steamed vegetables
1/4 cup brown sauce

One of the Chinese places here makes this HUGE portion of food (as you can see), and even though it was a bit high in calories (because I didn't split it into 2 meals like I had planned), I was so happy and stuffed. Next time, I'll split it into 2 super yummy meals!

1/4 c hashbrowns, not cooked in oil

Lunch:
Border Bowl, no meat
bean burrito

Snack:
1 slice cheddar cheese
1 slice muenster cheese
2 cups Coke

Dinner:
8 pierogies
2 tbsp fat free sour cream

Totals- 2143 cal, 63.5 gms/fat, 22.5 gms/fiber

Sorry I haven't been on, spent the weekend with my family and am currently juggling schoolwork and writing my first romance novel. I didn't bother to count this weekend since it was girl's night out for me and my mom and sisters. But, here's yesterday:

Breakfast:
1/4 c cashews
Fiber 1 bar
1 oz light pepperjack cheese

Lunch:
4 cups salad greens with 1/2 cucumber, chopped
1/4 cup light feta cheese
2 tbsp light raspberry pomegranate dressing
1/2 wheat bagel with 2 tbsp hummus

Dinner:
2 cups veggie chili
1 oz light pepperjack cheese

Snack:
Fiber 1 bar

Totals- 1455 cal, 47.5 gms/fat, 42 gms/fiber

I woke up at 7, left at 7:15, and then got back at around 9:15 and crashed until 1:45. Sad? Yes. I ended up skipping my 2 morning classes to sleep in today. Thankfully, I only slept in until about 9, so I should be able to get into bed by 10 tonight. Hopefully.

1 oz baked Tostitos
1 wedge Laughing Cow cheese

1/2 cup corn
2 cups green beans w/ 1 tbsp Brummel and Brown
1/2 cup mushrooms

I'm still under and still starving, so I imagine that I'll probably indulge in some chocolate or soy crisps while I'm awake.

No one else is doing the food log anymore. Oh well.

bok choy, mushrooms, water chestnuts, bamboo slices, garlic powder, & soy sauce. Plus I had a little bit of roasted potatoes too.

Just for fun, yesterday I had

B: Kashi GoLean w/soymilk and banana

S: Pretzels and dried apricots

L: spinach salad with cranberries, walnuts in raspberry vinaigrette
chickpea/leek/kale soup

S: baby carrots and apple

S: (had to eat something before the gym!) 1/2 sandwich with hickory smoked Tofurky, Vegan Gourmet mozzarella, tomato and spicy mustard on dark rye (yum!)

D: mac 'n cheese with broccoli, spinach, minced fresh pepper (banana pepper I think?), and kale. Ended up with more veggies than noodles in the end I think Still yummy.

Cocoa Booty

Almost a vegan day except for the Cocoa Booty at the end Mmm...chocolaty crunch goodness...

Good morning! I just DEVOURED (yes...pun intended) this thread! I have been trying to cut out all meat for about five years now, and finally did so a little over a month ago!! I am on a pretty restrictive vegetarian diet right now, but I just printed out EVERY SINGLE DAILY MENU that you all have posted. Variety within the vegetarian world will help me stay focused and stay on track once I am able to add things back in.

Thank you gaia, SoulBliss, Lindsey, shananigans, nelie and MugCanDoIt for posting your menus on this thread. Although it looks like noone has posted for a while, I will keep checking back to see if you've added anything else. We may not all post, but WE'RE READING!! Thanks!

Yesterday:

B: kamut puffs with soymilk and a peach

S: cantaloupe

L: Tofurkey sandwich with hummus on whole wheat bread
Spinach and romaine salad with blueberries and walnuts in red wine vinaigrette

S: vanilla soy yogurt, apple

D: spaghetti squash topped with chunky vegetable marinara with Morningstar sausage crumbles and broccoli and vegan “parm”

Today:

B: kamut puffs with soymilk and a banana

S: peanuts, cantaloupe

L: homemade veggie burger on sprouted grain bun
Romaine salad with raspberries, walnuts, and red wine vinaigrette

S: hummus and carrots

D: TBD maybe tofu & veggie stir fry?

breakfast: pineapple and slice banana bread

lunch: mexican rice w/ veggies, refried beans, salsa, and tortilla chips. and an empanadita.

dinner: 1 slice plain pizza

snack: vanilla yogurt w/ blueberry flax granola

I don't have a good plan for today but here's yesterday:

B: 2 slices sprouted grain toast, earth balance, apricot
S: grapes
L: 'sausage', kale, and white bean stew, carrots, pita, and homemade baba ghanoush
S: odwalla bar
D: 'sausage', kale and white bean stew, more sprouted grain toast, popcicle

Not very exciting but we are kind of out of food around here
