Where are all my vegan chickies? I hope that the summer bounty is being good to you like it is to me :)

Here's what I had today:

Tempeh "sausage"
Tofu scramble with peppers and onions
Breakfast potatoes
Coffee with soy creamer and agave nectar

Vegan "Ceasar" salad (romaine, ww croûtons and an amazing dressing)
Fruit salad (grapes, mango, strawberries, blackberries, watermelon, peach and lemon juice)
1 "everything" bagel
Lemonade ice (lemonade and ice, blended)

Green bean, tofu, red onion stir fry with Thai chili lime cashews and mango chili vinegar
1 slice rosemary bread with avocado

2 squares 70% dark chocolate with peanut butter

Just enough water to meet my quota. :o

All this deliciousness and YES, I stayed within my calorie range!!! :carrot:

Today was an anxious day, but I didn't eat too much, so I suppose that's a plus!

1/2 shot espresso with 2 oz. soy milk

1 cup mixed vegetable soup with a clear broth (carrots, cabbage, potato, celery, tomato)

4 cups salad (mixed greens, spinach, beets, carrots, chickpeas, peas, sunflower seeds, black olives, 1 T. olive oil and 4 T. rice wine vinegar)

1 slice sourdough bread with 1/2 T. Earth Balance margarine

1 baked potato with Tabasco and 1/2 T. Earth Balance

1/2 a Rice Dream ice cream sandwich (150 calories worth)

1/2 oz. soy jerky

1 slice rosemary bread with 1/4 an avocado

1/4 cup pineapple

Just enough water :)

Thanks for starting this thread... maybe I'll get some good ideas! I eat too much vegan junk food and not enough veggies and whole foods. For example...

- Kashi Strawberry Fields cereal w/vanilla soymilk
- Luna Bar
- Butternut squash burrito (no cheese, no sour cream) + guacamole
- Tortilla chips
- Homemade pizza w/veggies & vegan mozzarella cheese - 2 slices
- Soy Delicious Orange Dream bar

... but I'm at least within my calorie range!

I haven’t been eating so well, so not too much posting from me lately. Well, it’s a new day, never too late to start over!

B: 1 c Kashi cereal with soymilk, ½ banana

S: Peach (yum!)

L: Spinach salad with dried cranberries and walnuts, homemade balsamic vinaigrette
Hickory Smoked Tofurkey sandwich on whole wheat

I have a nectarine for afternoon snack and I think we’ll have falafel for dinner tonight.

Made a great big batch of fresh salsa and some guacamole for tacos last night. I don’t even miss cheese or sour cream on my tacos anymore, give me some guac and I’m happy. :D

I am in NYC and at an amazing retreat center, which means eating really well!

Rice milk with multigrain hot cereal

Steamed kale, quinoa, mixed greens, garlic, lemon juice, green onion, black beans, brown rice, spices

Chickpea butternut squash dahl, green lentils, brown rice, kale, beets, carrots, Indian Soup (carrots, zucchini, potato, peppers and a lemony broth)

India spice tea, Silk Milk, Emergen-C and water, LOTS of water!

The dairy demons were out in full force this weekend. For some reason the weekends just sort of fall apart for me. Eating out always gets me. However, I did manage to make it to our farmers market and get some local goodies.

Back on track today:

B: Kashi cereal with soymilk, kiwi

S: apple

L: mixed greens salad with cranberries and walnuts
whole wheat spaghetti with yellow squash and mushrooms in basil/cilantro/spinach pesto

S: carrot sticks

D: Tofu frittata

For yesterday:

S: carrot sticks, apple
D: Amy’s non-dairy pot pie

Cupcake tasting (not quite 1 cupcake)

It’s my fiancé’s birthday tomorrow. I made two different kinds of cupcakes for him to bring to work, as well as a round layer cake for cake at home with friends, and two different kinds of icing. All vegan, none healthy. :devil: I’ll be sticking to just a small piece of cake, good thing those cupcakes will be leaving my fridge tomorrow.

Today so far:

B: Kashi w/soymilk, strawberries
S: kiwi
L: Gardenburger w/ cheese (oops!) & fries (double oops!)
S: apple, carrot sticks

I ate lunch out with co-workers and the Gardenburger was the best vegetarian option on the menu. Didn’t ask for it with cheese but they put it on anyway, I didn’t return it because I’m just a vegan wanna-be anyway and I hate to have them waste the food and make my coworkers wait for me. I asked if they had fruit or anything else to replace the fries, the option I was given was cottage cheese. At least I only ate about half of them.

I’ve got a full weekend with out-of-town guests and birthday festivities. 2 baseball games and a night out at a comedy club, and probably a few restaurant meals. I’ll do the best I can, but I tend to cave in social eating/drinking situations. Wish me luck!

-3 homemade enchiladas w/Morningstar Farms chicken strips, onion, corn & Vegan Gourmet Monterey Jack cheese w/green chile sauce (YUM!)
-Soy Delicious Orange Dream bar

Triple Berry Antioxidant Tea

HUGE salad of mixed greens, chickpeas, carrots, beets, walnuts and "Macrobionic" dressing
Lasagna with spinach, squash, onions, garlic and mushrooms

Quinoa with sunflower seeds, carrots, celery, onions and miso
another salad just like earlier

Black beans and steamed kale with garlic

LOTS of water and an Emergen-C

SoulBliss – I’m so jealous of the fabulous food at that retreat center. You must be feeling like a million bucks!

Just to show you what happens when I am exposed to environments and people that encourage bad/binge eating and drinking, I’m posting this diabolical list of things I ate this past weekend. WARNING: **mostly not vegan**

Friday night at the ballpark – few cheese curds, veggie burger, too much beer
1 slice birthday cake (vegan) – chocolate layered with peanut butter and strawberry buttercream icing.

Saturday
- ½ bagel w/ veggie cream cheese, Morningstar Farms veggie sausage pattie
- Chinese Buffet – garlic green beans, scallion pancake, egg roll, potatoes, lo mein, fried rice, egg foo young
- 2 manhattans
- ½ pizza buffalina from Tutto Pasta (it was so delicious and evil at the same time!)
- 1 glass Chianti

Sunday
- Whole wheat pancake from Aunt Jemima mix with banana, walnuts, applesauce and a drizzle of maple syrup, 2 Morningstar Farms breakfast links
- Too much movie popcorn, about 5 soft pretzel nuggets w/nacho cheese
- Sierra Mist (regular :o)
(Baseball game again)
- Too much beer
- Veggie burger with cheese
- Potato chips
-2 slices leftover pizza (1/4 pizza)

Yikes! You’d think I’d get sick eating like this, unfortunately my stomach seems to tolerate it pretty well. Must have been all those years of training in college. On the bright side my fiancé said he had a great birthday, our guests seemed to enjoy their visit, and the food was really yummy.

Back to your regularly scheduled healthy eating again today!

B: Kashi with soymilk, banana
L: Whole wheat pita BP & J
Spinach, cranberry, walnut salad w/balsamic vinaigrette
S: Nectarine, apple

Don’t know about dinner yet, perhaps something with tofu.

I am still here in New York and have been eating well :)

Quinoa, kale, carrots, onions, garlic, umeboshi vinegar, nutritional yeast and spices

1 cup Silk milk, 2 apples, 1 slice multi-grain bread with almond butter, blueberry preserves and 2T. roasted pumpkin seeds

Beets, carrots, yams, quinoa, broccoli, chickpeas and spices

Lots of herbal tea, 1 cup of coffee with soy milk and agave and just enough water!

I've been emailing a friend with my food journal ... but I'd much rather blog ... I love what you're doing :carrot:, so if you don't mind I'm going to join in:
Yesterday I had a really bad day and overdid it with my calories (3000 calories) - I wish I could get it through my head that "when I'm tired I should go and sleep", rather than "when I'm tired I should go and eat", but today's a new day and I know everything's going to be okay!!
So here's what I'm eating today:
Morning: soy hot chocolate with sweetner + cup of cherries
Afternoon: salad + oil and vinegar + braised tofu
Dinner: pinto beans + salad + oil and vinegar + a piece of my newly baked vegan carrot cake (I'm really interested to know what this tastes like) + soy hot chocolate with sweetner

I really need to get to the grocery store and get more fruit!!!

1 cup steamed turnips with 2 tsp. Earth Balance Whipped
1 cup brown rice with 1/2 cup tomato, 1/3 cup onion and 1 tsp. coconut oil

1 cup Silk Enhanced

1 "Primal Strips" Jerky (10 grams of protein)

2 shots of espresso

1 small orange and 1 small peach

1 1/2 cups steamed broccoli
1 cup soba noodles
1 T. Siracha and soy sauce

1 slice ciabatta with garlic aoli

2 cups mixed greens with 1/4 cup blueberries, 3 pecan halves, 1 oz. "cheese" and an herbed blueberry vinaigrette

1 slice ciabatta with 1/5 an avocado, 1/2 a roasted red pepper, 3 pieces butter lettuce, 1/4 a cucumber, 1/2 a tomato and 1 serving pomme frites

1 serving "cheesecake"

1 cup coffee with Silk milk and 1 tsp. evaporated cane juice

58 calories of peach white tea ;)

While I stayed within my calorie range for the day, I didn't have the healthiest day! (PMS!!! :mad: ). I am posting to keep myself accountable.

Here's today:

2 veggie "sausages"
1 slice whole grain sourdough with 1 tsp. coconut oil
1 cup Silk Coffee and 1 cup French roast coffee

1 Cliff Oatmeal Raisin Bar

1 "Be Relaxed" vitamin water

1 cup soba noodles with 2 cups vegetables (snap peas, broccoli, zucchini, water chestnuts, carrots and celery) 1 tsp. nama shoyu and 2 tsp. siracha

10 dark chocolate, turbinado and salt coated almonds :drool:

1 oz. low fat soy cheese with 1 serving whole grain crackers

1 oz. salt and pepper potato chips :o

1 cup strawberries

1 cup calcium fortified orange juice

1 cup quinoa, 1 cup cooked spinach, 1 cup cooked broccoli and 2 oz. baked tofu

Okay...I am BACK on plan today! Here's what I am eating from 6:30am-3:30pm

1 slice whole grain sourdough bread with 1 tsp. Vegenaise and 2.5 oz. tempeh
1 cup calcium-fortified orange juice

2/3 cup quinoa made with 1 cup cooked veggies (spinach, onions and tomatoes)

1 1/2 cups steamed broccoli with 1 tsp. soy sauce and 2 tsp. siracha

2 cups raw veggies (carrots, cherry tomatoes and sliced cucumber)

After that, I still have up to 1,000 calories for the rest of the day! I will post when I get home after school today.

1/3 cup white beans with the quinoa earlier

2 shots espresso with 1/2 cup soy milk and 2 T. syrup

1 burrito with black beans, rice, guacamole, romaine, fresh and hot salsa

1 serving dark chocolate, turbinado and salt almonds :o

So very much water!

Okay, so it wasn't perfect but it was still a pretty good day!

What brand veggie sausage links do you buy? I like the Morningstar Farms ones, but I think they have egg whites in them.

It took me a few days but I am finally getting back to "normal" eating after all that crazy wedding stuff threw me off.

Yesterday:

B: 1 cup Kashi w/banana and soymilk

S: grapes

L: spinach salad w/ tomatoes croutons and vinaigrette
PB & J on whole wheat

S: apple, 2 Wasa crackers

D: Mystery moong dal stew (loosely based on my sloppy lentils recipe, I cleaned out all the veggies in my fridge)

Today:

B: 1 cup Kashi w/banana and soymilk

S: peach

L: Romaine salad with "feta", apples and vinaigrette
moong dal stew

S: apple

D: Jerk tofu
It's marinating in the fridge, if it's not raining I might grill the tofu on skewers with some veggies. Otherwise I might make some kind of noodle stir fry with it.

Those almonds are so good that I eat a serving, give my daughter a serving and then hand the rest of the package to my DH and tell him to take them away!!! :lol:

Yeah the Morningstar Farms have egg whites :( I wish they didn't!

I usually eat tempeh sausages I make myself or eat Trader Joe's or Gimme Lean (comes in a "roll") brand sausages-- the TJ and Gimme Lean ones aren't "health food" and have processed soy in them, but I find they help me keep my blood sugar stable when I drink coffee :)

I had a pretty good food day yesterday.

B: Kashi w/banana and soymilk

S: 2 figs

L: Spinach salad w/walnuts and cranberries in balsamic vinaigrette
Moog dal stew

S: 2 figs, small apple

D: Black beans and chickpeas with figs and bell peppers (loosely based on this recipe), served over spiced whole wheat cous cous.

Today's menu:

B: Kashi w/banana and soymilk

S: 2 figs

L: Spinach salad w/walnuts and cranberries in raspberry vinaigrette
leftover beans/figs over cous cous

S: 2 figs (the last of 'em, had to eat them fast before they go bad), small apple

D: Not sure, just me for dinner tonight so I might just throw together and cucumber tomato salad and have a whole wheat pita stuffed with hummus and veggies. We'll see.

I ended up finishing off yesterday with the last of the moong dal with a few tortilla chips after work and then a light post work-out dinner of cucumber tomato salad and half a whole wheat pita stuffed with hummus, spinach and peppered Tofureky slices.

Look at me, posting two days in a row!

Today's menu:

B: Kashi w/banana and soymilk

S: baby carrots

L: Spinach and baby romaine salad w/walnuts and cranberries in raspberry vinaigrette
PB & J on whole wheat

S: Baby carrots, small apple

D: Probably baked tofu with some kind of vegatable.

See a pattern? I eat so much of the same stuff M-F :^:

I'll have to spend some time thinking about all the ingredients I use and get back to you! One thing I can say about tempeh is that it works really well in many recipes if it has been marinated a really long time first. My family LOVES tempeh!

I just made a beautiful dinner with CSA (community supported agriculture) produce!

I received so many radishes that I had to use them tonight, so I made the following salad:

Radish, very thinly sliced
Cucumber, seeded then thinly sliced into long pieces
Yellow baby carrots, chopped
Spring onion, sliced thinly
Raw, unprocessed sesame seeds
Dressing made of EFA oil, spirulina, nettle leaf, dandelion leaf, garlic, lemon juice, lime juice and Himalayan sea salt

(The radish has a VERY strong flavor, so I think I may just pickle the rest of it.)

Then, I made a red lentil soup that was so delicious! It had:

Red lentils
Leek
Onion
Carrots
Heirloom tomatoes (green, red and yellow)

Once the soup was done, before serving, I stirred freshly chopped cilantro, coconut oil and umeboshi vinegar into each bowl.

All the above was organic and all produce came from the farm today.

I added Indian-spiced vegetable patties to the meal (not organic) as well as a bit of vegan "Caesar" salad (organic).

In all, we had such a colorful, healthy, flavorful meal, that I felt proud to serve it to my family.

Bean, potato and guacamole burrito with 1/2 cup green and chipotle salsa

Broccoli, yellow carrot, sweet onion and red bean "stir fry" (cooked with water, not oil) with nutritional yeast, umeboshi vinegar and coconut oil added after cooking

Sprouted burger bun with faux chicken, 1 orange heirloom tomato, 2 slices sweet onion and 1 T. Vegenaise

1 VERY large white peach (the size of a baseball!)

1 Uncle Eddie's Molasses cookie and 1 cup Silk with Omega 3's

Water!
