Tempeh and Seitan
Question from a total noob: I realize that it's unusual to find these items in a grocery store. I should look at a natural foods store. But assuming I'd like to look in my local grocery store, what section do I look in? What do these things look like? Refridgerated, frozen, canned? Thanks.

I have found tempeh in the refrigerated section of the larger grocery stores, the same section as tofu and soy-based alternatives to hot dogs, sausages, etc. It's my favorite part of the store! Ok, well, second to the wine section.

Here is a good, basic and easy to follow seitan recipe. Be sure you get the right flour! :) It's so affordable and for those who don't have access to such things, it's easy enough to make your own at home! (Isa's other recipes at her site are awesome too) - The postpunkkitchen.com
