Lunch.
So, I'm a vegetarian, and I'm looking for healthy lunches to take to school that are low in calories. Preferably high in protein.
Any help? |
How strict a vegetarian? Some go with absolutely no egg products such as what is in wraps and bread, but others just with meat, cheese, etc.....This would help with some ideas for you from others. My daughter is a pescovegetarian and it's hard sometimes coming up with ideas, especially when it comes to incorporating protein. She goes for items made with beans, peanut butter, salads with almonds, or protein shakes/bars.....

Vegetarian, not vegan. I don't eat meat, but I DO eat cheese and dairy and such.

She usually buys a lot of the vegetarian frozen burgers, hotdogs, veggie bacon and cooks these ahead of time and puts them on sandwhiches or if possible microwaves them at work. Some are made with black beans which are high in protein, 2 ounces of almonds, yogurt, etc. are also good. Wraps made with beans and veggies with cheese also.

If you can't do microwave, things like cottage cheese are great and filled with protein. You can take a lunch bag with an ice pack to keep cold things cool.
One of my favorite things is a hummus/avocado sandwich or wrap. Peanut butter sandwiches are also good or peanut butter on celery. I'm a wannabe vegetarian/vegan and I usually take dinner leftovers for lunch. Sometimes I also make salads like a bean salad that has cucumbers, tomatoes, garbanzo beans, kidney beans, onions mixed with salt, pepper, red wine vinegar and a little lemon juice. Hummus with veggies is also pretty good. How about a spinach salad with a variety of things? Suggested toppings could be beans, tomatoes, cucumbers, walnuts, diced cheese, corn, or any other things you can think of. Although I have heard many vegetarians say they don't care for salads because it is often the only choice given to them in some circumstances. |
