I posted on another forum about the Southaven Farm baking mixes. My daughter has decided to go vegetarian and I realized that she could make muffins and pancakes with these mixes just by using soy milk and soy yogurt instead of dairy. I make them with dairy but I tasted one of hers with soy and the muffin was delicious! If you need something like this, I highly recommend these mixes. southavenfarm.com

And if she's given up eggs, she can replace them with:
• 1 tbsp gram (chick pea) or soya flour and 1 tbsp water
• 1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water
• 2 tbsp flour, ½ tbsp shortening, ½ tsp baking powder and 2 tsp water
• 50g tofu blended with the liquid portion of the recipe
• ½ large banana, mashed
• 50 ml white sauce
I made multigrain pancakes this weekend and they are awesome!
