This is a fast, easy recipe. And it's filling! This makes about 3-4 bowls!
In a large pot, make 1 cup of rice.
Once about done, add 2 cans of chopped/diced tomatoes. With or without seasoning.
*** 3 cans of whatever veggie you like. I usually use corn, spinach [I use frozen and defrost in the microwave] and green beans.
I add garlic and dry herbs [parsley, herbs de provance, onion powder, whatever you like and have] as well---plus lots of hot sauce/cayenne
It's a great meal! You can add some chees atop to each bowl to melt as well!
