Sarah, my mouth is watering at your menu...it sounds fantastic..you'll have to tell your guests that you have some very jealous cyber friends who want to eat all the food. Maybe you could take pictures of the buffet set up, and I could sit here and lick the monitor?

Oooohhh - Wild Mushroom and Creamy Spinach Filo Tartlets look nice!

That fridge cake looks very easy - and very yummy. Okay - thats on the list as well. Now I need to find some sort of (easy) cake / dessert that hasn't got fruit or chocolate in it. Not necessarily vegan though.

What about pumpkin pie it's easy to make and can be made couple of days before.

I've never had pumpkin pie - is it savoury or sweet - and how do you make it? (And can you make it in advance and freeze it?) :?:

Cor! I made the refridgerator cake that Peacock gave the link to (thanks Peacock ) Recipe here (at the bottom of that page). I subbed in some broken up brazil nuts and glace cherries and made it with some ancient cherry brandy I found at the back of the booze cupboard instead of soya milk (because this is just for DH) and he absolutely ADORED it! Best of all - its probably the simplest dessert I've ever made.

Can you get canned pumpkin over there?

I'll post a recipe for it in the recipe thread.

It's sweet, don't know about freezing it but you can make it in advance and refrigerate it.

 Just answered exactly this on the recipe thread.

I remember mum making this a lot for us when we were young (ok, we weren't as deprived as I sometimes make out!!!). I have VERY found memories of it.

I've not had anything like that which is so easy. I'm completely gobsmacked by how something so simple can be so gorgeous - and I don't even much like chocolate.

DH finished the rest of the last one and is now making plans for the next one which (according to him) is going to be hazlenut, date and Tia Maria. This is a great way of getting rid of all the odds and ends in the booze and dried fruits/nuts cupboard.
