Lemon chicken with roasted vegetables
Ingredients:
- 4 chicken breasts
- 2 lemons
- Olive oil
- Salt and pepper
- 2 cloves of garlic, minced
- 1 cup of cherry tomatoes
- 1 cup of broccoli florets
- 1 cup of cauliflower florets
Directions:
- Preheat the oven to 375 degrees F.
- Season the chicken breasts with salt, pepper, and half of the minced garlic. Squeeze the juice of one lemon over the chicken.

- Squeeze the juice of the remaining lemon over the roasted vegetables and serve alongside the chicken.
