Ooooo prawn coleslaw. Not tried that combo, but sounds nice.

Its such a nice day I just thought I'd walk down to the shop and get some cauliflower. Gonna have to try that cauli-mash tonight.

I was just thinking ... Do mums who cook a family meal everyday tend to fall off the wagon more than mums with older children who cater for themselves? I'm pondering because i was just thinking how good it is to not have to do theirs too ( mine are 15 and 18 ) :)

Well, the chili omelette was a success! Just wish I'd toasted a slice of wholemeal to have it on, as always, a meal minus carbs leaves me feeling like I could eat more an hour later. Ahhhhh well, lots of water for me this evening, and an early night. I do not need more food!

Wow Raspberry74 I've not had prawn coleslaw in years, brought back memories!

N seriously, I can't wait until I'm back in the UK and can try this now famous cauli mash!!!!!

I really do like cauli-mash :) I usually buy the frozen cauliflower, because it's fast and cheap and you end up boiling it to mush anyway. I also really like it boiled and chopped in mock potato salad. Mix with chopped hard boiled eggs (I bin most of the yolks), celery, onions, carrots, peppers, a little light mayo and a lot of mustard. YUM.

Raspberry - I would never have guessed you could have children that age! :)

Tonights tea is leftover Moroccan Chicken (always better the next day, I think) and a cup of double black chai tea I've been saving (3 bags left from a brand I can't buy over here). Usually I drink tea black, but with half a spoon of sugar and a splash of milk, this stuff makes the best desert :)

OH MY GOD!

I just made some cauliflower mash, I tried a spoonful intending to have some with my tea tonight and decided it was so nice I wanted to have it for lunch.

I added a triangle of dairylea light to it and it made it really creamy :D I can't believe I never had this before!!

I had "Indian" beans tonight in jacket spud. Baked beans cooked with onion, garlic, chili, curry powder, cumin powder, coriander powder, mushrooms and red peppers. Delicious!

Sauteed some broccoli, tofu, and mushrooms and added a little bit of bbq sauce for some tangy sweetness. nom nom nom.

We're going to make the jackets with Indian beans, sounds delish! I'll probably make roast cauliflower with turmeric as a side to complete the theme :)

My tonight's tea won't give you any ideas. I am straight off ot my maths class after work so I have made a houmous and salad leaves sandwich. Whoop-di-do!

I'm working tonight. So I'll be having a grilled chicken salad with caesar dressing and a fruit bag from my work - McDonalds. Its so so tempting to just have a cheeseburger or some fries or whatever when I'm working. But thats what I think of as "Empty food" - I eat it and am still hungry. A salad fills me up properly :)

Just had my lunch - a BLT bagel with some mini carrot waffles. Mmmm. Skipped breakfast today as had a lie in...feel bad about that. But hey ho.

Oh gosh, have you tried putting cinnamon and sultanas in your stuffed pepper filling? If you see any recipes for Moroccan style peppers, try it, SO good!

We had blueberry pancakes tonight. The produce market had amazingly good blueberries today. I forget how much I like them, haven't had them in ages. Yum!

We went out for lunch, as its mothers day, so I had Vegetable chilli with polenta cakes. I'd never had polenta cakes before, and before they arrived I didn't even know what they were! It came with a side salad and garlic bread. That was really nice. And when I've come back and worked out the calorie content of my meal, it's actually not that high. The worst thing was the garlic bread I think. And it was so nice I think I'm going to make it for myself at home. :D Everyone had dessert while we were out, but I really fancied a white magnum so waited til we got back. Its nice to have treats :)

Tonight is pork lion in a teeny bit of oyster sauce, mushroom soy, pepper n garlic with stirfried veg. Possibly the last meal I'll look for myself in Thailand, eeeekk!

Can't wait to eat more jacket spuds when I'm home, love them, but pretty restricted on fillings here

They are my favourite :D i dont like cheese in them and i just fill them with salad and cooked grated carrot and sweetcorn in with the chicken. Mmmmmmmmm Can't wait :D

I had a naughty treat tonight. And it was soooo goooodddd!! I went to Frankie and Bennys for tea. And had CALZONE PIZZA! Mmmmmm. :D Don't feel guily either because after my hard work put into my performance today i deserved a super-duper treat :D

I love this thread, I get so stressed out over meal ideas.

Tonight I had egg noodles with stir-fry veg and chicken breast all cooked in chicken stock with a giant cup of lemon green tea (I am addicted to green tea.) and then I had a portion of mango for dessert. Rather have had the calzone though.

I'm looking for a healthy calzone recipe atm. Thing I'm struggling most with is the base....any ideas?

I had chicken marinates in reggae reggae sauce with a big salad for tea :) Mmmmm so so yummy!

Tonight I didn't want to cook and heat up the kitchen, so it was an antipasto plate - sliced chicken, olives, light cheese wedge, some veg, and a side of nf Greek yogurt. I love finger foods :) Also, anything I can dip! (almost forgot - a healthy dose of hot mustard to dip in, I also love to almost cry because my food is so hot :))

I think the closest thing to a lighter base would be a wheat or low carb tortilla. Not quite the same as a proper calzone, but with the right filling, similar flavor I would think. I use tortillas as pizza bases a lot, really good!
