Queen of the Beach Week of April 25

  • Hello all,
    Well, I didn't make it to the next level this week. Up untill Friday I was doing great! But then insanity hit. If it didn't move fast enough it was in my mouth.

    So today I have the water bottles ready and pulled the journals back out.

    I found a new good quote;
    "Life is too short to live in a body you don't enjoy"

  • I am feeling much of the same! I woke up on Friday and loved the scale! Then I had lunch and it all went downhill from there. So today is a new day with journals and exercise!

    I will post the cookie recipe. They were actually pretty good!

    I am going to keep on trying!
  • Okay, I am giving up chocolate until the last day of school--June 10! Maybe that will make a difference.
  • You go! I know you can do it! I have been trying not to eat after 8:00pm. I am like a big baby! I want to go to sleep with a full belly!!!
  • Hi, I'm here this morning. I've actually jumped to Stage III -- getting the cardio and water, but not the food part. It's bassackwards and doesn't count, I know. The food part is the hardest for me (duh). I was inspired by Ivana's gift to herself of Curves. About that time I joined a Yoga class. Love it. Also inspired by Ivana's appearance at my son's Communion party -- looking trim in black pants .

    I'm re-committing at Stage II. Got to change my short-term goal to 5 lb.

    I have a horrible time not eating after 8:00. I am like a big baby too. Any ideas on how not to do that? I think I could make it through stage III if I didn't eat at night.
  • Peanut butter cookies
    1 cup all purpose flour
    1/4 tsp baking soda
    1/8 tsp table salt
    3 Tbsp reduced-calorie margarine, stick variety
    2 Tbsp reduced-fat peanut butter
    1/2 cup packed light brown sugar
    1/4 cup sugar
    1 large egg white
    1 tsp vanilla


    1. Mix flour, baking soda, and salt in sm. bowl
    2. Mix (Beat) margarine and pb in bowl. Add both sugars and beat until blended. Add egg white and vanilla and beat until smooth. Then add in flour mix on low speed until blended.
    3. Roll dough into an 8 inch log on wax paper and wrap in plastic wrap. Put in freezer for 2 hours (up to 3 days)

    To cook
    1. preheat oven to 350 degrees. Coat the cookie sheet with cooking spray.
    2. Slice frozen cookie dough into about 24 cookies. Bake for about 8-10 minutes.

    1 point per cookie!!!
    Of course I had to add chocolate chips to the mix too, so that changed the point value just slightly.

    The whole family loved them and so did my fellow weight conscience friends.
