Where are all the festive pictures , I'm sitting here with my santa hat ,my hot chocolate, with my fuzzy santa slippers on, waiting patiently in suspence.can you picture that:lol:Ok we have been talking about this for more than a month I got in trouble from Cristi:nono: cause she was waiting for Thanksgiving to be over first and now Thanksgiving has been gone for two weeks:shrug: and its three countem three weeks till Christmas, yet I look, and sit, and wait, and nothing, no pictures, no Christmas Cheer ,:cry:I am determined to rally you gals up , :coach: comon girls lets go , I want action , pleaaaaaaaase, pretty please with a marshmallow on top.HO! HO! HO! Lets Go! I want pictures lots and lots of pictures .I will sit here until I see some :tired: ,so If you can't find me you will no where I am. :corn: |

Yes it is me again, I thought I would post my pumpkin cheesecake recipe so if any of you gals other than Cristi and I think it was Susan would like it, get yourself a pen and paper and jot this down. PUMPKIN CHEESECAKE BY ELLEN ( everything cheesy all the time) THIS IS NOT A WEIGHT CONSCIOUS FRIEND SO "BEWARE" :lol: NOW:chef: GET BAKING :rollpin: __________________________________________________ _____ Serves: as many as you want it to ,supposedly 16 depending on the size of the peice :hungry: Preperation time: around 25 minutes ,depending on how fast or slow you are cooking time: 1 1/2 to 2 hours, depending on your oven so follow the usual cheesecake doneness formula. cooling time : 2 hours , but can be made a day ahead and refrigerated covered . chilling time : several hours or overnight Ok are you ready to make cheesecake . I use 2 cups of crushed gingersnaps--- I use pantry brand ginger cookies any good gingersnap cookie will do 6 tablespoons melted butter if the mixture is dry add a bit more butter 1 teaspoon of ground cinnamon 2 tablespoons of brown sugar 1 cup of chopped unsalted chopped roasted almonds combine crushed gingersnaps ,butter ,brown sugar,cinnamon and roasted almonds . press into a lightly greased 10" springform cake pan, pat firmly and chill The crust is now done, pat yourself on the back and sip wine, not carved in stone Filling 3 lbs of softened cream cheese -- I use philly regular lots of fat. 1 1/2 cups of sugar granulated 5 x-large eggs or large 1/4 cup of flour 1 can of solid pack pumpkin 21 0z's 2 teaspoons cinnamon 2 teaspoons nutmeg do the spice taste test to see if its spicey enough if not adjust to your tastebud preference. now that you have all the ingredients assembled , sip wine,not mandatory at this stage of the process. Are you ready to mix ,ok Beat the softened cream cheese with electric mixer until fluffy Slooowly beat in sugar Add eggs one at a time , beating well after each addition Gradually beat in flour,pumpkin and spices Pour batter over crust Your filling is now done ,again congratulate yourself and reward appropriately. Bake this tasty morsal in a pre heated 325 degree oven for 1 1/2 to 2 hours or untill filling is set Cool this luscious cheesecake in pan on a wire rack for 1-2 hours Refrigerate for several hours or overnight ,you may sleep with the cheesecake for its protection.but is not mandatory. You have finished the process you may slug back that wine and enjoy the night:hat: :lol: Day of serving and Garnishes of choice . I whip up a quart of 35% whipping cream -do not add sugar ,unless you feel the need to , but this is rich enough . Smother the said cheesecake in whipping cream and decorate with unsalted roasted or sliced almonds , your preference of course, decorate with meringue snowflakes ,or rolled wafer cookies or more whipped cream, decorating is entirely up to you not required , ENJOY EVERYONE I HOPE YOU LIKE IT AS MUCH AS WE DO:crossed: |
Thanks for sharing the recipe Ellen. It sounds so yummy and I definitely will make one for Christmas dinner, or I should say Christmas Eve dinner. Can't wait to see your pics. I will be having some developed this weekend. Will do the one-hour other wise it will be another week before getting them back. Anyway...I gotta go for now.

Cristi I really hope you do enjoy the cheesecake , and your welcome,anytime .I borrowed a digital camera they are so much fun , I was taking pictures left and right before I realized it I had filled the card . I think I took over a hundred pictures of decorations pets and kids:lol: its so easy to do with those camera's. I had a great time ,I would love one of those for myself.I didn't know that they were so easy to use, I always imagine things like that to be complicated . I don't know about loading them onto discs or anything thats where my son comes in, and I also want to make pictures so I can make my Christmas cards . I know the disc is loaded so my pics will be here as soon as my son has a minute free after work. I am excited to see yours as well as everyone's who wants to share them,it should be great fun .

I will get some pictures posted tomorrow after work. I will take some of the tree and the little end table.....I didn't go all out like I wanted to, but that's ok, it's still festive here!
