Evening walk with dog for 1hour and 15 minutes doing arm stretches with water bottle. Meals Breakfast: berry juice Snacks: frozen banana slices, carrots Lunch: Cheese, tomato, lettuce, mustard on wheat bread Dinner-1/2 cantaloupe Dee-I eat a lot of Morningstar Farms Veggie Products, Boca, and Tofurky. They are my quick substitutes when I don't cook with regular tofu. Regular tofu is better though because it is not a processed food. It is funny that you have never heard of the word rump in that context before. Maybe it is used more of in the south. Perhaps just my family when growing up. Renee-I haven't been starving myself on purpose. Just haven't felt like eating as much maybe do to the heat. I will try to do better tomorrow. Thanks for pointing that out. Zucchini brownies sound good. Perhaps you will share your recipe. :D Ladies, tomorrow is mid-week. Were are doing good. :carrot: Lets keep strong and keep working at it. I think we will see some good results if we don't stop. We can do it. We will. :carrot: |

ZUCCHINI BROWNIES
INGREDIENTS: FOR THE BROWNIES: 2 cups all-purpose flour 1/2 cup cocoa powder 1 1/2 teaspoons baking soda 1 teaspoon salt 1/2 cup vegetable oil 1 1/2 cups sugar 2 teaspoons vanilla extract 2 cups shredded zucchini (1 large or 2 small zucchinis) 3-5 tablespoons water 1/2 cup chopped walnuts, optional FOR THE FROSTING: 3 tablespoons cocoa powder 1/4 cup butter, melted 2 cups powdered sugar 1/4 cup milk 1 tablespoon vanilla extract Pinch of salt DIRECTIONS: Preheat oven to 350°F. Line a 9x13" baking pan with foil and spray with cooking spray. Set aside. In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside. Using an electric mixer fitted with a paddle attachment, mix together the oil, sugar, and vanilla until well combined. Add the dry ingredients and stir. Fold in the zucchini. Let the mixture sit for a few minutes so the batter can absorb the moisture from the zucchini. Then, if your mixture is still very powdery, add up to 5 tablespoons water (start with 1 tablespoon and work up from there, stirring well after each addition). The batter will be very thick but shouldn't be powdery. (It partially depends on how wet your zucchini is!) Add walnuts, if desired. You may need to use your hands to work the water in instead of a spoon. The dough is super thick, like cookie dough. Do not add too much water! Spread in prepared pan. Bake 25-30 minutes until the brownies spring back when gently touched. To make the frosting: Whisk butter, cocoa, salt, and powdered sugar. Whisk in milk and vanilla. Spread over cooled brownies. Cut into squares and chill to semi-set. The frosting hardens slightly on the top but stays wet and gooey underneath. |

Good Morning girls,
It's been a tiring week. My Dh has been on 10 hour days & I get up with him at 3am all week, when he gets to work 9 hour days we get up at 4am & that extra hour of sleep makes a big difference to me, energy wise. Because my body clock keeps me awake until I watch the Nightline News at 11:30pm. Breakfast's = Watermelon for the last 3 days :dizzy: Lunches = Salads from my garden with black beans or cheese added for protein. Suppers = Blueberry waffles... Fresh caught Walleye, pan fried & topped with homemade peach salsa... Subway sandwich. Desserts = Snack size M&m's... Sweet purple grapes off my grapevine :p Snacks = 1 glass of wine... Fruit infused water... Renee :smug: Thanks for your brownie recipe. I bought a Spiral Veggie Slicer last month on Amazon that I'm going to try next week & make zucchini spaghetti noodles :D Corinna :smug: I love hummus too & the Sabra brand is one of my favs & I also like the white bean hummus. I don't eat soy products after reading & asking my Dh oncologist if it's true that eating soy weekly increases cancer risk & she said yes. So if soy is a just a minor ingredient, then I eat it. I loved bbq roasted soy beans, but I quit those too after a breast biopsy, negative results Have a wonderful weekend girls  |

Hi Ana
|
Hi Ana :welcome2:
About the soy/tofu, the only increased cancer risk I'm told that's been proven to soy is the estrogen factor linked to breast cancer. I've had 2 benign biopsies so I just pass on soybean food & like I said, a favorite snack I used to eat was the roasted bbq soybeans :p But when a food has a proven link to a disease I can skip the food & eat something else. Just like I don't bake with white sugar I substitute more natural sugars, often using a fruit that can substitute also for a natural fat, so I get a dual purpose healthy food :p :p A food that we still eat is bacon, that we buy fresh from a local organic business farm, no chemicals/nitrates, etc. We haven't chosen to be vegans or vegetarians, my Dh was raised on a dairy farm, so we eat organic poultry & meat meals several times weekly. I'm sorry if reading this post bothers anyone... |
We are a meat and potatoes family here. My husband's family has been farming for over 100 years and raised beef, pigs, chickens and dairy. I come from a restaurant background, so our meals are quite hearty. I love trying new foods as long as they're not too spicy.

Evening walk with dog for 45 minutes. Meals Breakfast: banana Snacks: carrots Lunch: wheat chips Dinner-veggie fajitas and beans Renee-I will be surprised if you don't lose some weight this week. You have been working hard with exercise and eating balanced healthy appropriate sized meals. I think the scale will smile at you. :cb: Dee-what you type doesn't bother me. I grew up on a farm too, and we had chickens, pigs, cows, and rabbits that we raised and ate. I became a vegetarian later on in life. It is my own choice. What you do is your choice, so it doesn't bother me. :) I hope you catch up on your sleep soon. Ana-Welcome to the group! :welcome2: We look forward to supporting you on your journey and sharing our successes. |
