Easter Challenge!!

This is to challenge yourself to lose weight before Easter. There is almost 4 weeks before Easter, plenty of time for us to get busy LOSING!!! We can post our goals and weightloss on this thread!

THURSDAY, 3/20

Breakfast: 3 eggs scrambled with 2T. real bacon bits

LUNCH: 2oz. turkey spam, cheese cubes, olives

DINNER: Wendy's BLT salad with my dressing from home

SNACK: Pork rinds

Here is what I ate today:

breakfast--1 slice canadian bacon, 2 fried eggs, decaf coffee and cream

lunch--string cheese, 1/2 avocado, hard boiled egg, celery with ranch dip, diet coke (my sinful treat!)

dinner--2 chicken sausages (Costco brand, yum), ceasar salad (romaine, parmesan and dressing)

dessert--diet jello and whipped cream.

7 more pounds to lose to make my Easter challenge!

Well since March 6 I have lost a total of 5.5 pounds. I guess I got a kick start in the begining because usually the most that I can lose is a pound a week.

Goal 6 pounds
Lost 5.5 pounds

black or green Sher!!! I usually eat the green kind with the cute little chunk of red stuff in the middle!! Love these chopped up on my salad with blue cheese or ranch dressing!!! Yummy, now I'm hungry!

Thursday

Breakfast: 2 bites of cold chicken
Lunch: slice of meatloaf
Dinner: BLEW IT!!! I ended up taking Thursday night as my free day because my dad made potato casserole....acckk...I had NO self control.
Oh well, there is more to life than just dieting! I'll get right back on the wagon for the rest of the weekend. Oh yes, did I mention he made Lemon pie???????????hehehe

Menu for Friday, 3/21

Breakfast: none

Lunch: Beef stick, 1/2 of a green pepper, 1T dressing

Dinner: Green pepper, onion, chicken, shredded cheese, sour cream all mixed together without the tortilla

Snack: 1oz peanuts * 1oz pork rinds

Ramona: The lemon pie sounds sooooooooo good!:smug:

Saturday I did well until evening hit! I ate a honey bun plus some chocolate!!!!! Guess I'll see Tuesday if my binge did any damage.

SUNDAY 3/23

BREAKFAST:none

LUNCH: BLT salad with dressing

DINNER: brocolli, cheese cubes, dressing

SNACKS: beef jerky ** chicken with dill pickle

The lbs. are starting to come off again. I'm down a total of 14 and I have 4 more to go to meet my Easter Challenge!

My menu for today:

B--bacon, scrambled eggs, decaf coffee and 1/2 and 1/2

L--1/2 avocado with seafood salad

D--celery and cream cheese garlic dip, salmon with tartar sauce

Water all day.

Questions for low carbers: are any of you ldrinking metamucil? I have a spoonful in my water every a.m. and also take a multi-vitamin.

I am getting some leg cramps at night---memories of being pregnant--so I'm thinking that I need more potassium. I used to eat a banana every day with my cereal). Anyone else have this issue?

Jeanne, I do the multi-vitamin plus I also take a potassium supplement everyday. I just started the supplement about three days ago because I am so exhausted feeling. I guess this way of eating can lower potassium levels and one of the first signs can be tiredness and leg cramps. They also suggest sprinkling your food with morton lite salt. As far as the metamucil, I am not needing it. I can not believe how often I need to run to the little girls room!

BTW: you are doing SUPE R on the weight loss! My loss is not near what yours is, but I can feel a difference in the way my clothing fits.

I concocted an OP soup this weekend and thought I'd share it. I know most people only eat soup in the winter, but I love it year round.

This is my version of cream of chicken soup:

Bring 2 cans of chicken broth to a boil. Stir in a small carton of heavy whipping cream. Add chopped green onions and diced chicken. I like black pepper and garlic powder added to mine.

When I make it again, I am going to add some salsa to it to make a chicken tortilla soup(sans the tortilla of course!)

Monday's Menu!

Breakfast...1 boiled egg...hard cheese
Lunch...BLT salad w/ ranch dressing
Dinner planned...2 hamburger patties w/ cheese.. 1/2 cup green beans

Snack...Water & more water

I weighed this morning and thank goodness for small miracles...LOL I STAYED THE SAME!!
