Chicken cheese Enchilada soup
 

This is my first post but I have been on this WOE since November. I had a craving and went into the kitchen and made it . My mom and I love it so thought I would share

In a pot heat
2 tablespoons olive oil
2 stalks diced of celery
1/4 cn of green chilies
1/2 onion
then add chicken I use chicken strips from price club and I us about 6-8 chopped
after chicken is done add
1can reduced sodium chicken broth
1 can enchilada sauce
Simmer for 20 minutes then add
1/2 cup cheddear cheese
Simmer 10 more minutes
I then freeze and us for lunchs at work with a salad
