Anyone Know If It's Possible To Make A Rue That Is South Beach Friendly? If I Use Ww Flour And Canola Or Olive Oil, Will That Work? Sooner Or Later I'm Gonna Have To Try It.

I Made An Okra/chicken Gumbo Last Week And Used Olive Oil To Simmer The Onions And Okra. It Was Good And I Can't Find Anything In It That Would Be Offensive To Sb. We Served It With A Little Brown Rice And (of Coarse) Tabasco.

I don't see anything wrong with substuiting ww for white flour and veggie oil to make a rue. We often do that with our cajun recipes,and they're all SB friendly

I use WW flour and olive oil for all my cajun cooking. It works fine. Most of the time the recipes that I use don't need an actual roux but if they do then this works. I have a great ham jambalaya recipe. I THINK I put it in the phase 2 recipes. I think my shrimp creole recipe is there too.
