Mock French Toast

I made this lastnight and OH MY GOODNESS it was freakin awesome!!! I can't be exactly sure who gave me the link to that recipe but thank you thank you thank you!!! This is just such a life saver for me, I'm not big on eggs but I didn't even notice the 1 egg and egg whites. Very tasty!!!!

Glad you liked it! I replied to your post with the link. My mom just started Phase I on Wednesday and I'm helping her through that. This recipe is definitely a staple!

Ok, I must be the only one who doesn't really "get" the mock french toast. I can never get it to come out like a pancake type thing, it sticks to the pan and I wind up with something like scrambled egg white custard that doesn't taste bad but needs quite a bit of sugar free syrup and smart balance.

Any suggestions?
