I read this somewhere else today and plan to try it.
Black Beans Take a can of black beans, rinsed really well and smooshed up a little, & a sprinkling of LF grated cheddar. Put it in a bowl, nuke it until the cheese gets all melty. Take it out, put about 1/2 cup of SF salsa on top, 1 cut up avocado, and about 2 Tbs of FF sour cream on top. Ole! All of the ingredients can be adapted or omitted to your liking. Any kind of beans will work. Any kind of SF sauce is good on top (marina, bruschetta), any LF cheese you like, and whatever raw veggies you like are good with this. |
See, this is like my other question on the refried beans. I can do this too. So just open a can o' beans, stir in some salsa, microwave and top with some cheese. That is a 3 minute lunch, I can do that.

Only 1/4 of an avocado is allowed, guys, because of the fat. Just watch it. Avocado is good for you, but like anything, too much is not a good idea. ;)

Thanks for the reminder, Laurie. I had forgotten about the serving size for avocado. I had planned to share it with my husband but I'll bet I would have eaten more than a quarter of it myself. :)

Avocado is in the same food group as chocolate and French bread for me.... :faint: So darn good and so lethal! I could easily put down a bag of Lay's potato chips, but an avocado? Are you kidding??? ;)
