Rhubarb Recipe Maybe?
Could this be SB, PH2? I will be having rhubarb soon and need something to use it in:

Recipe type: Low Carb Dessert Cuisine: American Serves: 16 bars and 16 cookies Ingredients For the Crust: 6 Tbsp butter 2 cups almond flour ⅓ cup granulated sugar substitute (I used Swerve) 1 Tbsp freshly grated lemon zest For the Filling: ½ cup chopped raw rhubarb 1 cup chopped raw strawberries ½ cup granulated sugar substitute (I used Swerve) 6 Tbsp unsalted butter 6 egg yolks 1 Tbsp Great Lakes Gelatin ¼ tsp xanthan gum 2 Tbsp lemon juice For the meringue: 6 egg whites ⅓ cup granulated sugar substitute (I used Swerve) ¼ cup strawberry puree (about ⅓ cup chopped, then pureed) |
I love anything rhubarb, and these bars sound lovely, but there is an awfully lot of butter in them. I wonder if a substitute would work, such as the Smart Balance sticks?
