Smile The Best ricotta dessert!

I just finished the best ricotta dessert!! It's a good thing I only made a single batch, because if I would have made more I most definitely would have eaten more!!

I added about a tsp of sf chocolate pudding mix to 1/2 cup of ricotta (I can't take credit for this part of the recipe, I saw it on the prevention SBD message board).....but then I added a few drops of almond extract, and beat it using my electric hand mixer. It got so light and fluffy, and so incredibly delicious! It tasted just like chocolate cheese cake. (It would be perfect with just a little dollop of whipped cream on top).

I'm having so much fun trying new recipes (which in itself is an amazing feat, since I generally don't like to cook, and really don't do it well).

I hope everyone had a great weekend. Hard to believe it's almost Monday again.

2Dog~~I do that also. I've always added the SF instant pudding mix because it because I mix cottage cheese & ricotta together, and the pudding helps to gel it better. I even add it to my protein shakes to make them thicker. The ones I love the best are :
~a combo of banana cream & chocolate
~pistachio(esp when you top it with a few pistachio nuts)
~vanilla with a touch of lemon zest or extract topped w/ a few blueberries

This Fall I'm going to add some pumpkin and spices w/ alittle vanilla pudding mix.

I do love the ricotta desserts with pistachio pudding added. Tastes almost like the Watergate salad my mother used to make!

Oh, I'm in heaven! I've had the ricotta with 1/2 pk Equal and a tsp of chocolate sf/ff pudding. Perfect!

Just what i needed...

I can't wait to get "creative" with this. Has anyone tried this with sf JELLO?
I'm thinking creamsicle here! Ooh! Maybe even key lime pie!

Kat~~I have tried it with the SF jello and it is best if you disolce the jello in about a tablespoon of hot water first. Then after it has cooler off a touch you can blend it in your mixture in the food processor.
You're right about the key lime pie (read: YUM ) , especially when topped with some FF cool whip. Hey, I think I'll make that this afternoon.

Sil: I hope you're not using FF Cool Whip--it has hydrog. stuff No-No"s! SBD'ers should use ReddiWip! But I'm sure going to try some of those suggestions!
