Cookies and Cannoli's..

grandmother’s pizzelle (Italian waffle cookie) maker, has put oopsie rolls to the test, yet again.
The results?
Two delicious variations on the oopsie theme.

Pizzelles
3 eggs, separated
3 ounces cream cheese
1 packet Splenda
1/8 tsp cream of tartar
With a mixer, whip egg whites with cream of tartar until stiff peaks form.
In a separate bowl, mix cream cheese with yolks and Splenda until just blended. Gently fold mixture into whites.
Pour into pizzelle form and bake.
Makes 16.
Nutritional information per pizzelle:
Cal 29
Fat 2 g
Fiber 0
Pro 2 g
Carb 1 g
Cannoli
3 Pizzelles (as made above)
1 cup Ricotta (must be dry)
1 oz. cream cheese
Splenda, to taste
¼ tsp cinnamon
¼ tsp vanilla
Pistachios, chopped
¼ tsp orange extract
Spread pizzelles on a work surface.
With the exception of the Pistachios, mix remaining ingredients together.
Fill Pizzelles, each with 1/3 of the prepared mixture. Sprinkle with,or dip ends in, pistachios. Present seam-side down.
Makes 3.

you can add flavors to these Pizzelles.. I added a vanilla to one batch and another batch I added a orange flavor... nice light cookie..
. the cannolis' are yummy with the great ricotta cheese... if your diet can take it a little grated darkchcolate sprinkled at the end of the cannoli makes it more traditional.

But just a question, *edit * can you make them without a waffle maker?

I don't know .. what is unique about a pizzelle maker it is makes thin cookies and flattens out the whipped eggwhites .. if you try this without a pizzelle maker, it needs to be pretty flat and crisp up on both sides otherwise they may be too soft .... but what the heck all might waste is a few eggs and cream cheese.. let me know if you do make
them...

I doubt if they'd turn out well made with a waffle maker because they'd be too thick, but you could make them in a small pan like a crepe. ;)

I make pizzelles and cannoli every Christmas and Easter, and I'm looking forward to experimenting with this healthier version. :)
