I'm so dreading Thanksgiving

  • I just don't know what I'm going to do!
    The craziest thing is that I am the person who makes all of the deserts! I'll still make them as my family will DIE if I don't.
    I've been scouring the internet trying to come up with some healthy recipes I can make for me and whoever else in my family chooses to indulge, but it's like I get overwhelmed when I'm looking and I can't find anything.
    I'm so nervous. Wish I could go to sleep and wake up in January!!!
  • You know what I would do? One, make something you do like that's on plan, and if no one wants it, then that's okay too. Two, make stuff for them, but make it the stuff you don't care for as much. Like for me...I don't like most cream pies, or pumpkin pie. Doesn't even bother me.

    Now apple pie? Mmmmmmmmmmmmm

    36-calorie flourless peanut butter cookies

    ingredients- makes 24 cookies:
    1 cup better n’ peanut butter (800cal)
    1 cup sugar substitute/stevia (0cal)
    1 egg (70cal)
    1 tsp baking soda (0cal)

    1. Preheat oven to 350 degrees F.
    2. Grease a baking sheet with butter (or PAM!) and set aside.
    3. Combine peanut butter and sugar in a mixer until smooth.
    4. Add egg and baking soda and mix for another 2 minutes.
    5. Roll 1 tsp of dough into balls and place onto the sheet. Flatten them.
    6. Bake for 10 minutes, until lightly browned.
    7. EAT EAT EAT.

    36 calories per cookie.
  • In prior years, I've let myself indulge at dinner. But I won't this year. I am going to go to my MIL and just pass on things and make 1 or 2 sides for me and whomever else wants to share. Will also make stuffed mushrooms and spinach artichoke dip too!

    I've never been a sweets person (In fact, I am STILL thinking about those chips from earlier today! so much so, I'm starting to stare at the candy bowl on my desk! I've been good for the month and 2 days since I put the bowl there and not indulged though) so I can't offer much advice other than to echo what Twynn said: if you are a chocolate fan, try a dark chocolate, flourless cake? Or make things with wheat or almond flour? Or, just makes things you don't like!

    I seriously doubt that anyone will "DIE" over it - plus, just blame a lack of selection on the economy!

    This is not a SBD friendly ingredient. It includes added 3 kinds of sugars and tapioca starch. Bet this would be good with natural PB.

    We like pumpkin cheesecake with rf cream cheese & Greek yogurt. I use crushed pecans for a "crust"
  • Oh no Jenne the chips are running through your mind! Even if you eat the candy you'd still be thinking about the chips so why even bother?
    I can't believe you have candy on your desk, it would drive me crazy.

  • I'm no help with stuff like this. Years ago I was a cheesecake fiend and made all kinds of cheesecakes so I'm very comfortable with the concept. I just found a basic pumpkin cheesecake recipe that used sour cream and cream cheese and subbed the Geek yogurt and rf cream cheese. I did the same with sweetener though I think I halved that because we don't like things too sweet (probably coconut palm sugar because it's one we will both use). I'm trying to remember the outside, i've used almond flour and crushed nuts, just lightly greased the pan and then spread them around the way you might flour a pan.

  • That's the recipe I use, and it's pretty good. Not as good as the real thing, but it's a great guilt-free substitute.
  • Linda, What crust do you use, or do you make it crustless? A layer of toasted pecans sounds pretty good to me...
  • I like to make a crust with Fiber One, Smart Balance, and a bit of sweetener. I just toss it all in the food processor til it's mixed. I've also used finely chopped pecans as a crust, with pleasing results.
  • I actually don't like cheesecake (or chocolate for that matter) but I may make this for the in-laws who DO like it!
  • I have been experimenting with almond meal crusts and have been quite pleased so far! I plan on doing an OP apple crumble with oats, almond meal, and nuts, etc. for a nice crumbly topping, as well as a SF pumpkin pie with almond meal crust.
