Planning dinner out: Quick Question
Yuca on Ph2 of SB-Yay or nay?

I'm not familiar with yucca, so I googled, and this is the info I got from LiveStrong.com -
The Nutritional Value of the Yucca Root The CDC states that the yucca root is a great source of Vitamin C and is high in carbohydrates. It contains fiber and has about 120 calories in a one cup serving. Taken from the Centers for Disease Control and Prevention, a half cup of raw, sliced yucca root equals the following dietary content: 160 calories, including 5 calories from fat; 0 g total fat; sodium, 15 mg; cholesterol, 0 mg; carbohydrates, 39 g; dietary fiber, 2 g; sugars, 2 mg; and protein, 1 g. It looks like it should be fine for SBD, Jenn. :) |
thanks! I think it's kinda like a sweet potato - of course it also depends on how it is cooked but I will read more about it when I get to the restaurant. Thank you!
