Ok is this one of this starchy vegetables only to be eaten on occasion? The book doesn't mention butternut squash but says on phase 2 that winter squash is considered starchy. Just curious.

yes, it's a starchy vegetable along with all the winter squashes except spaghetti squash (I don't understand it but I'm not about to complain!).

LOL Rukidding me Great idea! I buy it cubed and frozen I tried to cut and peel only once too much trouble for me!
Jersiigirl if you live close to Stop & Shop they always have them frozen in cubes and it's cheap.

I bought it pre cut yesterday but found cutting it up fresh tasted so much better.

The microwave did an great job. I did poke it a few times with a knife and in 10min I had me a nice after workout snack. I looked in my spice rack and seen smoked sea salt and a bit of black pepper and it was very good. I'm trying to cut out butter. I think I'm actully started to really like my veggies w/o it.

This is so funny because we just made baked butternut squash in my food prep class last week! It can be cut without nuking it but you do need a really good knife and strong arms, I had to hand mine over to the teacher to do! Then we just hacked the skin off with the knife because it was so thick. We pretty much just baked it with illegal ingredients (butter, brown sugar) and cinnamon and cardamom. I only had a few bites but it was really good. I picked up a squash this week to try with some olive oil, salt and pepper and was thinking about maybe melting some cheese over it? Maybe gruyere or something?

That sounds yummy!! I eat too much cheese as it is so don't give me any more ideas!! Lol
