I think the best remedy for that is to find foods that you want to eat... then "bulk" them up with veggies!
I love salads, almost every meal I eat comes on top of some type of salad! Arugula is my favorite, then mixed baby greens, spinach, etc...I actually love them all! To make my salads different I mix up the toppings... like black beans and salsa, today's lunch had buffalo quinoa(but usually I would do tofu, which is p1 appropriate I THINK).sometimes I do a dab of hummus on top... to me this is key to still maintaining lots of veggie consumption. My motto is the salad is the main course- and that always keeps me up in my veggie count! |

For the last couple of weeks I've been snacking on these baby gourmet cucumbers. They are just baby "seedless" or english cucumbers. They are so yummy I like how I can just grab one and eat it whole like a pickle. Sometimes I split them lengthwise and spread a 1/2 triangle of laughing cow on each half. They don't have the most nutrients in the world but I'll tell you what, they do the trick when I just want to shove something in my mouth or want some crunch.
