Cream of chicken soup
 
I bought 2 pork chops but they are so thick I thought it was 4 till I unwrapped them. They would be great grilled but I don't have a grill. I'd like to cook them in a crock pot with some Campbells cream of chicken soup. Is that OP? I'd be happy just eating the chop & not eat the rest of the soup. The soup would make it tender & flavorful. Having some on brown rice would be great. I really need more variety in my meals. I am in phase 1.5

If you could list the ingredients on your can that would help. I think we talked about these soups before though and the answer is no, too many starches as fillers. Maybe someone has a SB friendly version?

I just looked at a can of Cream of Mushroom soup I keep in the house for DH's tuna casserole (blech). The answer is probably no because the third and fourth ingredients are modified food starch and wheat flower. How about trying to butterfly the chops, or cooking them this way?:
-sautee the chops in a heavy pan
-when the chops are done, dump in a package of saurkraut, liquid and all
-scrape up the brown bits from the bottom of the pan and sautee the saurkraut for about 3 minutes
-stir in 1/2 cup lf sour cream and 2 tbsp. lf cream cheese
-spoon mixture over chops

It's SO good.

Morning Matilda, Thanks for sharing your recipe. It sounds good and I am certainly going to try it. I agree, the canned cream of chicken soup would be a no go.

Another option would be to thicken some chicken or veggie broth with arrowroot and pour that over your chops while they're cooking. Adding some pureed cauliflower to the broth would also make it thicker and make a tasty gravy.

I don't eat pork but I do remember thinking this recipe from Kayln's Kitchen looked like a yummy way to fix pork chops for my husband and son.

That does sound good but would have to buy 2 ingredient that I probably wouldn't use again for some time. Maybe I can find another recipe to use those ingredients for the other one later.
I can also lay it on some veggies & pour some lite Italian dressing over all.. I do that a lot so really wanted something different.
Unless I cook it in a crock pot I will have to butterfly them. They are sure a 2 meal chop... weighed over 1/2 a lb each.
Hmmm I found my recipe.. I'm gonna use the one Heidi58 posted. Gravy is what I am looking for. I have plenty Chicken broth.
I won't be able to do it till tomorrow as I have a finger food get together at church tonite. I'm taking ham & cheese WW sandwiches so I'll be sure to have something to eat. Hopefully there will also be other things to eat too.
