Cauliflower Alfredo Sauce
Start with a head of cauliflower and cook it in 2 cups of chicken broth. In another pan, sautee onions and garlic in a bit of olive oil When its all cooked, throw it all into a blender (broth and all) and add in a 1/4 cup parmesan cheese, blend until pureed. 1 cup = 1 point! |
And if you want JUST an Alfredo sauce, here ya go:
1/2 cup skim milk 3 Laughing Cow Creamy Swiss Light wedges 1/2 T. parmesan cheese 1/2 T. Molly McButter 1 pinch garlic Throw everything in a small sauce pan. Stir until melted and creamy, about 10minutes. |
Yummmmmmo. Hey, I wonder how the cauliflower sauce would be with some laughing cow thrown in? I might have to try that tonight!
|
That's what I do with mine because I like decadent :) It's very good. So far this batch I've made creamed spinach, super rich and comforty, and broccoli and veggie chicken with the sauce. It's on the plan for today again. Hope you like it.

just got back from the store buying the ingredients. Is 2 cups of chicken broth really enough?

I made this last week and was surprised at just how good it was! Next time I make it, though, (this weekend!), I'm going to add some Laughing Cow. I like decadent, too. :) What are you serving yours over, Matilda? |
I added two laughing cow light garlic and herb; next time I will add another and more pepper too. I had it over grilled chicken and it was delish. Even hubby likes!

Oh my! The most creative South Beach recipes I've found have been on this board! Thank you for posting these recipes.

oh my gosh...thanks for the "just alfredo" recipe Ruth..i made it according to directions and got "alfredo soup" cause it was very liquidy and not thick so i assumed there was a bit of corn starch added to thicken it?? But when i did and it thickened up..it was amazing!!! i had it mixed in with prawns and green beans..so good!
|
No corn starch on SBD, especially in Phase 1. I threw my box out years ago.
|
Is there an acceptable substitution, maybe arrowroot? Where did I hear that (was it Atkins)?
|
Egg yolk would thicken it.
|
oh okay..egg yolk..right..cause for some reason it was just soupy..and what is molly mcbutter? I had to use 1/4 tsp of i cnat believe its not butter instead..
