What's For Dinner? Fall 2010
 
I'm looking for more ideas as I plan out the menus for the next few weeks, and I bet some of you are, too! So, what's for dinner tonight? Maybe we can help each other stay on plan with healthy dinner options!

Tonight we're having beef and lentil stew that's cooking up in the slow cooker. Yum! I'll round it out with salad and DH will add some toasted rye bread to his meal.

I am making a lot of soups. Some of which I have found here. Soup is great in the Fall, warm fast and easy!

In the crock pot currently is split pea. I will probably make some Parmesan crisps to go with it to take the place of crackers.

Tonight I am taking it easy and making turkey meatballs (from Trader Joe's, so "making" them means just putting them in the oven), salad and some rice for my husband. Tomorrow night I am making salmon patties (also from TJ's, so making them means frying them up on the stove) and probably some roasted cauliflower with pesto sauce. Friday night I'm going to make the spagetti squash casserole with mushrooms and turkey pepperoni and fresh tomatoes.

lazylioness, making parmesan crisps is a great idea. i'll use that one soon.

tonight we're having a baked ziti, but I'm replacing the ziti with spaghetti squash...so it's just kind of like beef, marinara, ricotta and spaghetti squash. we'll see. Rounding it out with a salad and I got a whole wheat french demi-loaf for the kids and DH.

I was going to make turkey meatloaf (from the book) but I found that I don't have half of the ingredients, so I am sauteeing up some veggies (just ones I had in the crisper) , adding pesto (yum ) and then I am going to make a breakfast casserole (2 meals in one) I make up the recipes myself.

I need a good turkey meatball recipe. Without breadcrumbs (or perhaps I can make Ezekiel bread crumbs)

I'm trying the crack slaw tonight for the first time. Hopefully it will be as good as some of you have said. Will also add a grn salad for me, perhaps I may even roast a veg.

Parmesan crisps are about 2teaspoons of Parmesan cheese on a hot griddle and melted. Or you can bake them. They get all crispy and good. Hubs to be makes "cheez-its" with cheddar that way. Taste like crackers, not great fat wise, but awesome when you are craving a certain square salty cheesy cracker.

zeffryn i LOVE spaghetti squash. Made an awesome parmesan "noodle" with it the other day, topped it off with turkey spaghetti sauce. YUM

You can make it without any meat for a side dish. I can eat half the recipe sometimes.

Mmmmmm....crack slaw! Must put that on the menu after Thanksgiving. It's just so darn versatile!!

Tonight we're having roasted chicken with rosemary. Can you believe I found FRESH rosemary in our grocery store?!?! I couldn't. I've got to run back to the store later today, so I'll pick up some veggies to have then.

Okay I give in, we are having crack slaw tonight. I don't make it in the summer because I refuse to use non-local veggies when there is so much available at the farm stand. Now that it's officially cold though cabbage and carrots are about all I can get. Should be ready in about 5 minutes and it smells great

Last night was a veggie sauce. I use the same recipe I've always used for sauce and load it with veggies, veggie crumbles and beans. I eat it like stew, no pasta. In the old days I ate it over half a lb of pasta :eek:

I got home early enough to make butternut squash fries from a squash right out of my own garden. :D I had a bunless veggie burger with it.

I think crack slaw will be on the dinner menu very soon. You all made me hungry for it again.

Last night's rosemary roasted chicken was delicious and we had it with roasted potatoes :o and parsnips. I even made a pan gravy for hubs and he LOVED it!!

We had plenty of chicken leftover, so I tossed it with some onions and bell peppers in the skillet and we had it as taco filling in ww tortillas and a side salad.

Tonight I made chili with leftover pintos and some kidney beans, a bit of tvp, served dh's over mac and mine over loads of onions, peppers, and zuchinni (DH won't touch it if I put that stuff in it from the beginning!)

I tossed them in a bag with with a little olive oil and Spike seasoning first, then roasted them at 450* for about 45 minutes. I think they taste better than regular french fries. :)

Tonight's supper was 1/2 of a Kashi Thin Crust Meditteranean pizza, topped with loads of mushrooms and baby spinach.

I picked up a nice head of cabbage at the market this morning, so I'm making Crackslaw for tonight's supper. I make mine with sauteed tofu and throw in some mushrooms, too. :hun:

I had vegetarian chili topped with diced avocado, shredded cheese, and a dollop of Greek yogurt. It really hit the spot after being out with the girls and the horses in the cold wind!

We're already into leftovers from our senior center dinner.

Tonight I'm making Baked Brown Rice to which I added diced turkey and used stock for the liquid. Halfway through, I put some diced butternut squash on top of the mixture. I did add a little extra liquid to compensate.

I'll serve it with a large, fresh green salad.

Tonight's supper was butternut squash lasagna, stuffed with mushrooms and spinach. I have plenty of leftovers for lunches and maybe a supper or two for the next week, too. :drool:

I tried the Thanksgiving Meatless Loaf with sauteed cabbage on the side. It was pretty messy and I didn't have the quinoa flakes I thought I had. I'll let you know what we think. It does smell good.

We had white chicken chili. It was super delicious. Chicken, stock, green chiles, salsa, and navy and black beans. Oh, my!

Now I'm thinking about the crockpot veggie white chili recipe. I'll have to go find that soon.

I just loaded small red beans, salsa and veggies in the crockpot for tonight. Trader Joe's veggie chorizo is my magic ingredient for quick crockpot bean dishes. I will either add brown rice or make roasted squash. There's plenty of time to decide :)

Tonight we're having an asian peanut butter turkey tenderloin from the crockpot. It has all the basic ingredients of a thai peanut sauce (subbed a teensy bit of agave for the brown sugar). it smells SO good.

Last night was the spaghetti squash gratin from Kalyn. I'm addicted. For lunch today, I stuffed it into a portabella mushroom cap and broiled it until it was browned and crispy on top. I think I might try adding artichokes next time. Come to think of it, if the spaghetti squash was pureed a bit, it would make an excellent and really healthy spinach and artichoke dip.

The Trader Joe's we go to has the refrigerated fake meats near the hummus and cheeses. I always buy 5-6 of these because I use it just about every week during crockpot season. Sometimes it's dinner, leftover lunches or even breakfast with an egg over the top. I usually only add some garlic and onion but the chorizo has enough seasoning for the whole stew/chili.

Tonight's dessert was Kalyn's Low Sugar Spiced mini-cheesecake. I made half the recipe and used VivAgave ( a dry agave mixed with enough fiber to balance the sugar) in place of splenda and palm sugar in place of brown sugar. We loved them.

*and no whipped cream :)
