Susan, I noticed you said hotdish and had to laugh. I'm originally from Minnesota as well, though currently living in Louisiana. I think Minnesotans are the only ones that say hotdish instead of casserole. :)

We say that in Iowa too!

Iowa and Minnesota are kind of like sisters, though. ;)

I'm actually the Irish :kissluck: (75) and German (25) Lutheran girl and I'm with an Italian (100!!!) Catholic guy. However, he's non-churching :dunno:, and I'm very spiritual but more of a :goodvibes Jesus Hippie :cloud9: ("the greatest of these is love ") and not too stuck on tradition (stand up, sit down, open, shut, repeat.) :frypan:

Do love a hotdish though. :hungry: And I like Smilies :D

Yeah we were all kinds of ready for soup and chili, had cool weather for a week, and then back up to the mid 80's again, for fun. :sunny: I believe it will cool off again this week though :rain:, so we can get back to the yummy fall chow! :stir:

PS Went to Lutheran school from Pre-K all the way through high school. In 6th grade or so, we learned a song that went a little something like this:

Tune of "Louie Louie"

Pharaoh, Pharaoh,
Ohhhh no, let my people go!

(shouting)

OOFDA! Yaaaahhh suuuuure you betcha!

(Repeat)

Ha! This whole post just made me smile! :D

My husband has just enough Irish in him to give us an Irish last name. :)

I like your views on spirituality. That's more of how I think, but I did officially join the church after we had our 1st kiddo. I thought it was important for us all to be the same. They don't call it converting anymore, even though that's what I called it! And I never told my Grandma that I'm Catholic now. :o :o

Love the song!

Is that because we make fun of each other?

One of my best friends is from Iowa, and there is always some friendly banter over our states... and her driving skills. :)

I used to think MidWestern drivers were bad until I moved down here. Watch yourself!

Don't say that during football season though! Daughter that lives in the Twin Cities & has been at the U of M for 5 years says "I will never be a Gopher!".
Another Irishman here!

I made a quinoa casserole last night. It was excellent.

1 1/4 c. quinoa
2 cups vegetable broth
veggies of choice (I used zucchini, red bell pepper, sweet onion, 1/2 sweet potato)
seasonings of choice (i used a bit of creole seasoning, some garlic and herb mrs. dash and a few fennel seeds)

bake at 400 for 50 minutes. it's SO good. I served it over fresh spinach. Everyone, including my 1 year old, loved it.

I can imagine making it more harvesty with different types of veggies. I imagine some cubed squash and other root veggies would be pretty tasty.

Zeff, I bet your quinoa casserole would be divine with cubes of pumpkin in it. I'm going to try it, hopefully, this weekend.

EmmaD - I made those sweet potato gnocchi you posted a link for. They are good! My only suggestion is to make sure you add a good amount of cinnamon, because I found them a tiny bit bland.

CyndiM 10-17-2010 06:29 AM

Last night was thick fresh tomato sauce with lots of peppers, mushrooms, eggplant & Gimme Lean mixed with spaghetti squash  It's one of our favorites.

Tonight I'm making black bean pumpkin chili in the crockpot.

Good to hear! I haven't even gotten around to making them, I have been distracted by too many other recipes. I guess there are worse problems to have, haha. I am looking forward to trying these.

Black bean and pumpkin chili - yum-my! I have made it with cubes of sweet potato before - is it like that, or is it with pumpkin puree? I am going to look up some recipes right now.
