Curry for Crockpot?

I really love the smell and taste of curry. I want an easy not too many ingredients for a crockpot curry that is Phase 1 friendly. Anyone have any to share?

There are several recipes, using curry, that you could easily adapt for the crockpot in our Phase 1 Entrees section. I would add a little more spice than called for in the recipe, though, since it will be in the crockpot all day.

Kalyn's Kitchen has all kinds of ideas for curry;

You got me thinking curry sounds pretty good! This is what I'm doing:

I have part of a carcass from a grocery rotisserie chix-which already has lots of seasonings added. I put the carcass in the crockpot, covered it with boiling water and added 1 lg onion, cut in half. I tossed in 1 1/2 T Frontier Seasonings, Curry Powder. I'll let it cook while I'm gone-2 hrs. When I get back I'll debone the chix, slice my onion halves smaller, add some garbanzo beans and largely diced zucchini. I can adjust the seasonings at the end.

The thing about curries is that you can add practically any meat or vegetable...sweet potatoes, onions, zucchs, carrots, cauliflower....I've never tried broccoli....beans. Curries are very flexible.
