Ok, "Little Miss Recipe" found a great one. I used this on salmon the other day and chicken today. I happen to use honey occasionally and this is great..sure you could sub agave with same effect.
Mix up honey (agave) maybe 1/4 cup with a tablespoon of chili powder and a crushed garlic clove. I used the vitamix, but a blender or wisked would also work. I grilled some chicken on top of the stove using olive oil spray and creole seasoning (anything you like would work) When it was done, I painted it with the honey mixture, flipped it and coated the other side and let it cook in the bubbling stuff for a couple of minutes. OMG. Had a whole grain orzo/greek (cucumber/olive, tomato, feta) cold salad with it and also caprese salad. Happy husband, happy me... **Dizzy, just saw your post after I completed this. Are you in phase 2 yet? If so that greekish salad I was talking about would be great with a barbque. (I'll post the recipe if you want it) If not, then how about marinating some good tomatos and cucumbers with some finely chopped vidalia onions in a balsamic vinegarette? Do it early in the morning or tonight and it will be great and very refreshing in this horrid heat. That is something I try to keep in the fridge all summer long..cooling and great when you want to forage in the fridge at night. Adding avocado to it is also wonderful. |
Hi ladies,
TGIF!! I'm so jealous of you all with your heat! It's 11 C here today (that 52F) and there is a "light rain". There has been a "light rain" here forever and I'm so tired of it. On the up side, we did plant some grass seed last week and it's already up (although I would have thought it needed sun to grow but apparently not). Hopefully Sunday will be nice so I can buy my bedding plants and start planting (yep, short season here in Saskatchewan!). Yesterday I signed up for a "bin service" at a local organic grocery store. Once a week they will prepare a bin of fruits & veggies for me and I just pick it up each Wednesday. I am having them choose all the produce for me so I will get out of my rut of buying the same thing everytime I go to the grocery store - I can't wait to get started. I had my mom's birthday party last night - 18 people and it was inside 'cause it was raining (of course). I started out so good, just "snacking" on fruits & veggies, but then, I was so busy making sure everyone else was eating, drinking, etc., that my 1 glass of wine turned into a few more and I pretty much ended up drinking dinner instead of eating it. That'll probably show on the scale but I'm hoping on my weigh day on Monday I'm still down at least a pound as so far I'm still at 170 and have been all week. I hope you all have a great week-end with your lovely weather:flow2:. Pam |
