Default Amaranth...

So, I'd never cooked it before and saw some in Whole Foods the other day and decided to try it. OMG. Anyone else a fan? This stuff is GREAT. I love grits and have really missed it and this has the same "feel" to me but with a little pop to it. Can't wait to try it with cinnamon and agave sometime.
HMMMM...shrimp and amaranth instead of grits..heaven!!!!

I'm just learning to fit quinoa into my meal plans! I'll get a bit and give it a try. My morning smoothie IS amaranth based, but I've never tried cooking it.

My husband loved it too and I told him "If grits and quinoa had a baby, it would amaranth"
I've been doing more research on it and it has the most protein of any grain, good for osteoperosis (sic) preventing colon cancer and memory loss and great for preventing wrinkles..hey, they got me at wrinkles!!

Cyndi, I added stuff to it while it was cooking. Herbs,some green onions and Creole Seasoning and a little olive oil and salt. I served shrimp on top of it.
Beans on top, or chicken stir fry would also be good.
I've heard it is also good fixed like oatmeal with cinnamon, toasted nuts etc on it.
I read that the sprouts are very good for you, so I'm trying to sprout some.

One cup of amaranth to 2.5 cups boiling water. Rinse it first, then add to boiling water, let come up to a heavy roll, then turn on low, covered,for about 25 minutes.
