To clarify, so I don't sound so disgusting....cream cheese in that there blueberry omelette!!

Tammy I think the mock pancake made really really thin. Then spread some creamcheese on top and some blueberries rolled up sounds kinda yummy. Throw some sf vanilla or caramel syrup in the "pancake" mix too. Wonder if that would be good? Maybe will try this weekend.

Yes! Although I haven't had the mock pancakes, it sounds similar.
