Me too! Even after all this time I still have to use a measuring spoon for my PB - otherwise I take way tooo generous a serving.

I don't have a PB cake recipe (never even heard of that, but it sounds like a delicious idea!), but I do have one for chocolate cake with PB frosting.

I really want to make that cake. I think I will make it this weekend. We ahve a super bowl party to go to. I am thinking of making it for that. I don't want the whole cake here, but I want to try it.

You guys are talking about natural PB, right? Doesn't most regular PB have a lot of added sugar and stuff? There are few brands where the only ingredient is peanuts.

Watch for added fats too. Your PB should be nuts and salt (or not if you're avoiding salt). Personally I love natural, crunchy (or super crunchy) PB, a little too much sometimes I got a spoonful of sunflower butter one day and realized it had added sugar. Yuck. If you like a sweeter taste try PB with flax. Maybe it's just me but I think it tastes weirdly sweet. We get it at Trader Joe but I know Teddy makes a variety too.

There's an Amish market near me that makes freshly ground peanut butter right in the store, and it's so good! They'll even add in anything you want to it, but I always get my plain. My problem, though, is that I have an awful time limiting my portion to 2 tablespoons. With Lent coming up, I've been thinking of what I could sacrifice, and I think I'm going to give up peanut butter. It's going to be hard, though!

I hated peanut butter before this diet. I would never eat it, and now it is my savior!

We have Vitamin Cottage here and they grind their own peanut butter. Just peanuts and oil...totally delicious!
