I love the Progresso mushroom soup too, Rikki! That's one of my weekend lunches.

Tonight was the last of the meatballs (from the meatball casserole) with sliced/sauteed zucchini.

I actually came looking for an idea tonight....leftovers...soup.... I pulled a mystery soup out of the freezer and it looks like Split Pea with salad and whole grain bread.

re the corn tortilla thing. I do occasionally eat corn stuff. Not often, but I do. I get some olive corn tortilla chips that I love to eat with eggplant tempande. The SB police haven't come after me yet. I just try to keep it to a small serving.

Shrimp creole sounds great! We are tying pecan encrusted trout that was on sale at the store this week. I hope it tastes as good as it sounds. I saved it for a night when it would be just me and DH because I know the boys would never like it!

Tomorrow night is leftovers; I am happy to have a night off from all this planning and cooking.

Tonight I made a vegetarian version of the Mock Cornbread w/Spicy Beef Casserole. It was really, really good, and a recipe I'll be reaching for often.

Cyndi, IMHO as long as the sprouted corn tortillas aren't causing any problems for you, go ahead and enjoy them. Especially since the sprouted corn has a lower glycemic count.

Ham and bean soup tonight.

We also had the lemon cheesecake cups from the dessert phase 1 thread. These felt like cheating. They were good!!! The remainder will go into the freezer.

Cannellini beans simmered with Anaheim chiles, and whole wheat cornbread for DH (I haven't made it since starting SBD)
