That frittata turned out REALLY tasty by the way. It also had sun dried tomatoes and caramelized onions on top. I've been on a kale kick lately.
But you wouldn't be happy about tonight - meatloaf!

I love kale after the first hard frost. I've got a bag of tops but ours is now buried under the snow.

I was planning Taco Bake but DW has an off tummy so it will be roasted squash, roasted eggplant & veggie burgers. I'll probably mix some beans with my roasted veggies :)

mmm boring night tonight. Chicken Breast and Colli Its just me and the kids tonight so Ill find away to jazz it up for them
