Ricotta muffin failure?

  • Okay, so I made these and was excited to have a grab and go breakfast if I needed them but the fell....drooped when they cooled. At first, they looked good. They were plump and cooked and fine. Then as they cooled,they shriveled up. Like a raisin. There's only 4 ingredients in the thing and I can bake so what's up???
  • Mine usually come out like this too. They still taste good! :-)
