Not very summery, but DD requested spaghetti and meatballs, and I try to encourage them to come up with dinner ideas (I get sick of being the only one doing it), so I will comply. I think I'll skip the pasta and put mine over zukes (wish I had one of those spiral thingies).

cottagebythesea 07-06-2009 07:15 PM

Tonight's supper was a Boca Bruscetta Burger patty over salad greens with a drizzle of Ranch dressing.

SunshineCA 07-08-2009 02:16 AM

Tonight I had a taco salad. Yum! :)

The kids had theirs with shells. :)

PHinsUP! 07-08-2009 10:18 AM

My best so far.. (i've only been back on it a week) was a grilled sirloin with a grilled tomato/yellow bell pepper relish with fresh basil in it and fresh summer squash lightly steamed with a little 2% cheddar cheese drizzled over it. i cooked it while I was eating lunch and then took it to work with me and reheated it (I actually took the squash raw and it steamed while the steak and relish were heating) MMmmmmmmm my hubby told me to not lose that recipe!

femmecreole 07-08-2009 11:21 AM

Going to make a frittata made out of yesterday's leftover sliced turkey cutlet/veggie mixture along with salad and fresh fruit.

grneyedmustang 07-08-2009 11:45 AM

Tonight's dinner is a buffalo burger, sweet potato fries and a salad. Yummy!

SunshineCA 07-08-2009 02:29 PM

Tonight we're having Rosemary Grilled Tilapia, leftover salad from lunch OR a tossed salad, and leftover asparagus I didn't use this morning from my mushroom and asparagus omelet.

CyndiM 07-08-2009 07:42 PM

It was a comfort food night - Kashi three mushroom & spinach pizza and kale with white beans.

Lexxiss 07-08-2009 08:56 PM

:sunny:

Ahh Pizza night. I'm making pizza. I use an Ezekial tortilla, add chopped garlic, LF cheese and whatever else I have. Tonight its onion, zucchini, bk olives, pepperocini and turkey sausage (Jimmy Dean 2 links). It makes the best pizza. Its Kirks favorite and very inexpensive.

And as always, a giant salad. Just got home from the CSA farm.

cottagebythesea 07-08-2009 09:52 PM

I had leftovers from last night's supper - felafel balls with Arrabiata sauce over shiratake noodles, on a bed of raw baby spinach.

murphmitch 07-08-2009 10:47 PM

I sauteed onions, bell peppers, bok choy and mushrooms in some EVOO, then added a can of drained garbanzo beans and a little sun-dried tomato pesto. One of the best meals I've ever had!

cottagebythesea 07-09-2009 06:40 AM

This evening's supper is going to be a saute of Swiss Chard, cannellini beans, and onions and garlic, with a side of roasted cauliflower. I'm looking forward to it, as I could happily eat Swiss chard every day and not get tired of it. :)

grneyedmustang 07-09-2009 02:19 PM

Tonight's dinner is grilled sirloin, with tomato "pizzas" and a salad.

Murphmitch, your dish sounds quite tasty :)

I actually bought 2 bags of the frozen stir-fry, sliced up 2 ropes of the turkey sausage and a few spices for taste. The kids LOVED it! :)

Schmoodle 07-10-2009 08:49 AM

shrimp fried "rice" tonight. One of my faves! :p Everyone else will be eating pizza, but I won't care.

Mmmmmm....sounds delish! ;) Enjoy!! :)

Tonight we're having leftovers from last night. My daughter wants corn bread muffins so I'll make those for the kids.

cottagebythesea 07-10-2009 06:13 PM

Tonight it's Kashi Thin Crust Margherita Pizza and roasted cauliflower.

Chelby29 07-10-2009 08:08 PM

Had a big, fat salad for lunch. Had a big, fat salad for dinner. I'm salad-ed out! Tomorrow I'm making spaghetti squash pizza.

grneyedmustang 07-10-2009 09:25 PM

Broiled lemon herb salmon with a huge salad.

murphmitch 07-10-2009 09:49 PM

Chicken breast, peppers, onions and zucchini sauteed in EVOO with a little pesto added in. Need to get to Farmers Market tomorrow. I'm out of produce.

Chelby29 07-10-2009 10:00 PM

Anne, You reminded me that our Farmer's Market is open tomorrow. Hooray!

PulleezThisTime 07-12-2009 01:23 AM

My favorite dish this summer was salmon grilled on the grill (gas) on a cedar plank. Soaked the cedar plank for 1 hour (or more). Piece of salmon, skin side down and don't turn it. Mmm, yum.

I'm new to liking Salmon. Have steamed it also with a dill sauce.

Kudos regarding Vidalia Onion mentions. One of the BEST things about summer, along with tomatoes.

PulleezThisTime 07-12-2009 01:30 AM

Another great meal was BBQ chicken salad. Lettuce & spinach, black beans, avocado, diced tomato, bits of bacon, roasted or grilled chicken (grilled bone-in breasts, pulled skin-off before tearing into bite-sized bits. Sauted onion on top.

Dressing: LF sour cream and LF mayo with a touch of BBQ sauce, chili powder, garlic powder, salt, pepper and a touch of cummin. Needed to thin dressing with a touch of water.

SunshineCA 07-12-2009 02:47 AM

Tonight we had:

~Herb-Marinated Chicken
~Broccoli
~Salad
~Sugar-Free Jell-O

CyndiM 07-12-2009 07:33 PM

Baby bok choy with sesame oil & soy sauce, veggie burgers

cottagebythesea 07-12-2009 08:19 PM

Grilled salmon with spicy soy ginger sauce, mixed greens salad, and a SBD no-no, corn-on-the-cob.

murphmitch 07-12-2009 10:24 PM

Peppercorn pork tenderloin on the grill (yum), roasted tomatoes and zucchini (from Rachael Ray last week), steamed broccoli, baked sweet potato and corn on the cob (for the family).

SunshineCA 07-12-2009 10:55 PM

As I was marinating the London Broil for tonight's dinner, I decided I'd let it marinate until tomorrow. There are leftovers in the fridge and it's just my daughter and I again tonight. If my oldest comes home, there's enough salad, shredded chicken I made earlier from the extra chicken I didn't prepare yesterday, and other things. Knowing him, he ate with friends before he came home.

I'm going to have salad and toss in some of the shredded chicken. For dessert, I may have a sugar-free Jell-O or a sugar-free Fudgesicle.

Lexxiss 07-13-2009 05:48 PM

Macaroni and Cheese. It's really good, just like my Grandmother used to make....only two changes....alot less fat and WW pasta. A big salad, of course, sauteed zucchini. A treat for dessert WW blueberry gingerbread cake.

cottagebythesea 07-13-2009 06:56 PM

Tonight it was roasted cauliflower topped with a spicy marinara sauce and sprinkled with goat cheese. Dessert is going to be a fresh sliced peach topped with FF Cool Whip and a sprinkle of SF granola.

CyndiM 07-13-2009 07:34 PM

Swiss chard frittata with a side of zucchini spirals tossed quickly with a tiny bit of EVOO and plenty of garlic

cottagebythesea 07-14-2009 06:29 AM

I'm planning on a tofu stir-fry tonight.

Ruthxxx 07-14-2009 06:35 AM

I'm having stir-fry too, Cottage, maybe with half the tofu you stashed in my freezer. I am overloaded with veggies so it'll be a good way to use them up.

Schmoodle 07-14-2009 09:49 AM

Salade Nicoise with baguettes - I'll avoid the bread and potatoes. Yum! Liberté, égalité, fraternité!

jandaman 07-14-2009 11:20 AM

chicken peanut stir fry tonight!

cottagebythesea 07-14-2009 06:10 PM

I'll make my stir-fry tomorrow. We ended up going to a seafood buffet since I got a surprise afternoon off. :)
